Bami Goreng

 

Bami goreng is an Indonesian stir-fried noodle dish made with a mixture of meat and vegetables. It’s a very comforting meal to have at home, especially for gatherings and casual dinner parties.

For our bami goreng, we have used Al Islami Catering Chicken Franks, provided to us by one of our partners, S&O (Standard and Origin). Unlike most chicken franks, these do not have an artificial taste, but a rich and slightly smoky flavour to them. They are great for using in recipes like hotdogs, noodles, fried rice and more.

Ingredients:

For cooking the noodles

  • 3 ½ cups water
  • 4 packets of noodles (about 308g, without the seasoning sachets)

 

For the tomato chilli paste

  • 3 green chillies
  • 2 garlic cloves
  • 1 small onion
  • 1 medium-sized tomato

 

For the sweet soy sauce

  • 2 tbsp dark soy sauce
  • 2 tbsp brown sugar

 

For stir-frying the meat

  • 10 thinly sliced Al Islami Catering Chicken Franks (360g)
  • 250g thinly cut boneless chicken
  • 70g thinly cut beef
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 tsp lime juice
  • 1 tbsp oil

 

For the bami goreng

  • 1 tbsp oil
  • 1 garlic clove (minced)
  • 2 eggs
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 2/3 cup thinly sliced carrots
  • 2/3 cup thinly sliced cabbage
  • 1 tbsp oyster sauce
  • ½ tsp chicken stock cube
  • ¼ cup thinly sliced green onions
  • 1 finely chopped green chilli

 

Instructions:

  1. To start off, add 3 ½ cups water into a pot and let it reach a boil on high heat for around 6 minutes. Then, add 4 packets of uncooked noodles (without the seasoning sachets) and cook for 2-3 minutes or until they become soft. Drain any excess water using a strainer and set aside.
  2. To make the tomato chilli paste, first roughly chop up 3 green chillies, 2 garlic cloves, 1 small onion and 1 medium-sized tomato. Add them to a grinder and blend for 30 seconds on high power until it becomes a runny paste. Set aside.
  3. Then, to a pot, add 2 tbsp dark soy sauce and 2 tbsp brown sugar. Cook on high heat, while continuously mixing, for about 1 minute and 30 seconds or until the sugar dissolves and thickens up the soy sauce.  The sauce should be thick enough to coat the back of a spoon, while still being a bit runny. Set aside.
  4. Now, to prepare the meat. First, add 10 thinly sliced Al Islami Catering Chicken Franks, 250g thinly cut boneless chicken and 70g thinly cut beef to a large bowl. Season the meat with ½ tsp salt, ½ tsp ground black pepper, and 2 tsp lime juice, coating everything well. Set aside.
  5. Next, add 1 tbsp oil to a large pot and heat it up for 30 seconds on high heat. Then, add the seasoned meat and stir-fry on high heat for about 6 minutes or until they are fully cooked and lightly brown on the outside. Transfer to a bowl.
  6. Then, to the same pot, add 1 tbsp oil, along with 1 minced garlic clove, and sauté for 1 minute or until the garlic is lightly browned on medium-high heat. Then, add in 2 eggs, ¼ tsp salt, and ¼ tsp ground black pepper. Stir the eggs for around 1 minute, until they are semi-cooked (some of the eggs will still be runny).
  7. Now, add back in the stir-fried meat and mix well with the semi-scrambled eggs. Then, add in the tomato chilli paste and mix for 1 minute to let the flavours settle into the meat and eggs.
  8. After that, add in 2/3 cup thinly sliced carrots and 2/3 cup thinly sliced cabbage. Continue stir-frying for 1 minute and 30 seconds or until they are semi-soft but still have a slight crunch to them.
  9. Then, add in the sweet soy sauce, along with 1 tbsp oyster sauce and ½ tsp chicken stock cube (you don’t have to dissolve the cube in water). Mix everything well together until combined.
  10. Lastly, add the cooked noodles, ¼ cup thinly sliced green onions, and 1 chopped green chilli. Stir the noodles for about 2 more minutes, making sure that it is well mixed with the vegetables, eggs, and meat. Now, the bami goreng is ready to serve.
