Baked Mac n Cheese

 

This rich and silky baked mac n cheese is so easy to make, great for a dinner night with friends and family. It is the perfect combo of garlic, milk and cheesy goodness.

The hero ingredient of our baked mac n cheese is the Agnesi Durum Wheat Semolina Pasta kindly provided to us by one of our partners MHA. Agnesi has nearly 200 years of experience in making pasta, providing the perfect Italian selected quality pasta for this recipe.

Ingredients

To cook the pasta:

  • 4 cups water
  • 2 tsp salt
  • 250g Agnesi Durum Wheat Semolina Pasta (elbow shape)

For the pasta sauce:

  • ¼ cup butter
  • 3 cloves garlic (finely chopped)
  • 2 tbsp flour
  • 2 cup full cream milk
  • 1 tsp black pepper powder
  • 2 tsp chili flakes
  • ½ tsp oregano
  • ½ tsp salt
  • 1 cup shredded cheddar cheese

For the topping:

  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese

 

Instructions:

  1. Pour 4 cups of water into a pot and bring it to a boil.
  2. When it starts to boil, add salt and pasta. Cook it for 9 minutes and drain.
  3. Next, melt butter in a saucepan, add the garlic and sauté for 1 minute on medium high heat.
  4. Then add in 2 tbsp flour and whisk over medium high heat. Continue whisking for about 2 minutes until bubbly and golden.
  5. Gradually add 2 cups of milk. Continue cooking and stirring for 3-4 minutes until you start seeing bubbles on the surface.
  6. Add in 1 tsp black pepper powder, 2 tsp chili flakes, ½ tsp oregano, and ½ tsp salt. Mix it in till it is well combined in the milk.
  7. Add 1 cup shredded cheddar cheese and mix until creamy and smooth. The sauce will start becoming thick.
  8. Next, add the cooked pasta and stir to coat the pasta evenly with the cheese sauce.
  9. Pre-heat the oven at 200°C for 10 minutes.
  10. Pour the mac n cheese into an 8.5×6.5-inch baking tray.
  11. Drizzle the ½ cup shredded cheddar and ½ cup mozzarella cheese evenly on top.
  12. Bake in the oven at 200°C for 20 minutes. When the top is golden and bubbly remove from the oven.  It is best served still warm so that the cheese is silky and rich.
