Chicken Luncheon Meat Burger

 

The ingredient list may be long in this one but this recipe here yields a super easy yet really tasty chicken burger.

The ingredient making things both tasty and easy here is actually chicken luncheon meat. We used Hereford Chicken Luncheon Meat that we got from one of our partners ADK General Trading. It browned up nicely when fried in a little oil and gave our burgers so much meaty flavour.

Ingredients:

  • 1 small potato (¼ cup when mashed)
  • 2 cups water 
  • 1 medium onion
  • 2 garlic cloves (for the patty)
  • 1 green chill
  • ½ tsp. sliced ginger
  • 8 curry leaves
  • 170g Hereford Chicken Luncheon Meat
  • ½ tbsp. oil (for browning the luncheon meat)
  • ½ tsp. soy sauce                                 
  • 1 tsp. oyster sauce                            
  • 1 tsp. lime
  • ¼ tsp. salt (for the patty)
  • ¼ tsp. ground black pepper
  • 2 tbsp. flour
  • 1/3 cup dried bread crumbs
  • 3 tbsp. oil (for cooking the patties)
  • 2 cheese slices
  • ¼ cup grated cheddar cheese
  • 2 tbsp. butter
  • 2 burger buns (4-inch buns)
  • 1 small garlic (for the sauce)
  • 5 tbsp. mayonnaise                          
  • 1 tbsp. chili sauce                              
  • ¼ tsp. chili powder                           
  • ¼ tsp. mixed herbs
  • 1 medium tomato
  • ¼ tsp. butter (for brushing on the buns)
  • 2 lettuce leaves                                 

 

Instructions:

  1. Cut the potato into quarters and add it to a pot along with the water. Boil the potato until soft. For us this took about 20 minutes. Once the potato is soft, switch off the stove, remove from the water and set aside to cool down.
  2. Roughly chop the onion, 2 garlic cloves, green chili, ginger and add into your grinder along with the curry leaves. Grind until it becomes a paste. For us this took about 20 seconds.
  3. Chop the luncheon meat roughly; ours were bite sized pieces.
  4. Heat ½ tbsp. oil in a pan and add the luncheon meat. Cook on medium heat for around a minute.
  5. Add the soy sauce and oyster sauce to the pan, mix to combine with the luncheon meat, and cook on medium heat until the meat is slightly brown. For us this took around 4 minutes. Once cooked, remove from heat and set aside to cool down.
  6. Once the boiled potato has cooled down, remove the skin and mash the potato with a fork and set it aside.
  7. Add the cooked luncheon meat to a bowl. Then using your fingers, mash it until it comes to a minced meat like consistency.
  8. Add the ground onion mixture and the mashed potato into the mashed luncheon meat and mix with your fingers to combine.
  9. Add lime juice, ¼ tsp. salt and ¼ tsp. pepper and combine well using your fingers again. Add the flour and mix with your fingers to combine again.
  10. Divide the mixture into 2 parts and shape into patties. Our patties had 4 inches in their diameters.
  11. Add the dried bread crumbs, ¼ tsp. salt and ¼ tsp. ground black pepper to a plate and mix to combine. Gently place the patties in the dried breadcrumbs and flip and pat to give them a nice thick breadcrumb coating.
  12. Heat 2 tbsp. oil in a pan and gently place one patty in it. Cook on medium heat for about 2 minutes on each side or until brown on both sides.
  13. Place a slice of cheese on top of the patty, top that with half of your grated cheddar cheese, and cover with lid and cook on low heat for 2 minutes. Remove the patty to a plate. Add 1 more tbsp. oil to the pan and cook the remaining patty in the same manner (If your pan is large, you might be able to cook the patties at once too).
  14. Cut the buns in half.
  15. Add 2 tbsp. butter to a pan and toast the buns on medium heat, cut side down, until slightly brown. Set aside.
  16. Grate 1 small garlic clove and add it to a bowl along with mayonnaise, chili sauce, chili powder, mixed herbs. Give it a good mix. Set aside.
  17. Cut the tomato into 6 slices
  18. Preheat the oven to 230 degrees Celsius for 10 minutes and brush the outer side of the bun with butter. Place the buns on a tray and once the oven is preheated, place the tray on the middle rack of the oven and heat the buns for about 2 minutes. Remove and set aside.
  19. Halve the sauce and spread it evenly on the bottom halves of the buns. Place the lettuce leaves on the bottom halves. Then gently place the patties on top of the lettuce. And then place the tomato slices on top of the patty. Spread the remaining sauce evenly on the cut sides of the top buns and place the top buns on top of the tomatoes. And that’s it.
