Crumpy Cookies

 

Very happy to share our first ever cookie recipe with you guys!

We like our cookies soft, moist and chewy, so these are exactly that. And we also like our food best when we can whizz it up in a jiffy, so these cookies are that too.

As you can tell from the name and the photos, the key ingredient in this recipe is Maldives’ beloved chocolate spread Crumpy, and we are bringing you this recipe in partnership with MHA, the party responsible for having us hooked on Crumpy spreads for all these years. The premium chocolate spread made in Belgium comes in three flavours: Duo, Hazelnut and Dark Chocolate. While all of them taste superb on toast and even by the spoonful straight out of the jar, for these cookies you’ll need our favourite of them all, the Dark Chocolate.

Makes: 8 cookies

 

Ingredients:

  • ¾ cup Crumpy Dark Chocolate Spread
  • 1 egg
  • ¾ cup flour
  • ¼ tsp salt
  • 10 thinly sliced almonds (optional)

 

Instructions:

  1. Add the Crumpy Dark Chocolate Spread to a mixing bowl. Add the egg and using a spoon, mix until combined.
  2. Sift the flour and salt into the bowl and mix again until well combined.
  3. Then add two thirds of your sliced almonds and mix again to get them combined evenly too.
  4. Chill the mixture in the fridge for 30 minutes.
  5. Lay a sheet of baking paper on the bottom of the tray you’ll be using for baking the cookies (we used an 8 by 12 inch rectangular one) and set it aside.
  6. Once the 30 minutes is up, take the mixture out of the fridge and divide it into 8 equal portions.
  7. Roll the portions into balls and then flatten them by gently pressing them in between your palms (ours were around 2 inches in diameter when flattened) and then lay them on the tray you prepared. Leave a gap of around an inch in between them as the cookies are going to spread a little as they bake.
  8. Sprinkle the rest of your sliced almonds on top of your cookies and gently press the almonds lightly into the tops of the cookies.
  9. Preheat your oven at 170 degrees Celsius for 10 minutes. While your oven is preheating, place the tray with the cookies in your freezer and leave it in there for the entire 10 minutes.
  10. When the 10 minutes is up, remove the tray from the freezer and place it on the middle rack of the preheated oven. Bake at 175 degrees Celsius for 12 minutes or until the edges are slightly crispy and the top is slightly cracked.
  11. Remove the tray from the oven and let the cookies cool down in the tray. The cookies are going to be very soft when you remove them from the oven; they’ll firm up as they cool down so don’t worry about that.
