Spicy Baked Beans

 

Got a tin of baked beans sitting in your cupboard? How about you give this spicy baked beans and potato dish a try? It’s great for breakfast with some roshi.

 

Serves: 2 -3

Ingredients:

  • 2 medium sized potatoes
  • Water for boiling the potatoes
  • ½ tbsp. salt (or to taste)
  • 1 githeyo mirus (or to taste)
  • 1 large onion
  • 2 tbsp. oil
  • 3 curry leaves
  • 3 tsp. chicken curry powder
  • ½ cup himun hikimas (ground dried tuna)
  • 1 can baked beans (425 grams)

 

Instructions:

  1. Peel and cut every potato into 4 parts.
  2. Place the potatoes in a pot and pour enough water to cover them. Add the salt too.
  3. Boil the potatoes until you can run a fork through them easily without much resistance.
  4. Drain the potatoes, slice them thinly and set aside.
  5. Slice the onion and githeyo mirus (scotch bonnet pepper) thinly.
  6. Heat the oil in a pot and add the onions, curry leaves and githeyo mirus.
  7. When the onions soften and take on a brownish colour, add the curry powder. On low heat, cook for around a minute, just until you can smell the spices.
  8. Add the hikimas and potatoes and mix well.
  9. And finally add in the baked beans and give it a good mix.
  10. Cook on low heat for 3-4 minutes and that’s it.
