Vermicelli Pudding

 

Vermicelli pudding is a flavourful dessert made commonly in India during special occasions like Eid. It is an easy pudding to prepare using some simple ingredients at home.

For this recipe we have used Aroy-D Rice Vermicelli, provided to us by one of our partners, KDM. Aroy-D Rice Vermicelli is a high-quality noodle with a light and delicate texture, making it ideal for absorbing both sauces and broths. This vermicelli noodles can be used in both savoury and sweet dishes.

Serving Size: 3-4 people

 

Ingredients:

  • 60g Aroy-D Rice Vermicelli
  • 1 ½ tbsp unsalted butter
  • 2-inch piece of cinnamon stick
  • 3 cardamom pods (ends snipped off)
  • 2 cups full cream milk
  • ½ cup condensed milk
  • ½ tsp vanilla essence
  • ½ tsp cinnamon powder
  • ¼ tsp cardamom powder
  • 1 tbsp roughly chopped almonds
  • 1 tbsp roughly chopped pistachios
  • 1 tbsp raisins

 

Instructions:

  1. To start off, break up 60g Aroy-D Rice Vermicelli into small pieces that are no large than 2.5 cm. You can just break them up using your hands, and it is okay if it’s not all even size.
  2. To a medium-sized pot, add in 1 ½ tbsp unsalted butter, 2-inch piece of cinnamon stick, and 3 cardamom pods. Melt the butter on low heat for around 1 minute and add in the broken-up vermicelli and roast on low heat for 7 minutes or until evenly browned. It should turn a medium, vibrant brown in colour.
  3. Then add in 2 cups full cream milk and bring the heat to medium and cook for around 7 minutes, until the milk is reduced a little. Stir frequently.
  4. Now add in ½ cup condensed milk along with ½ tsp vanilla essence and cook for 4 minutes on medium heat until the mixture is a bit thicker in consistency.
  5. Then add ½ tsp cinnamon powder and ¼ tsp cardamom powder. Mix well and cook for another 2 minutes or so, until it thickens further (it will be like a custard consistency at this point) and the milk is reduced enough to see the vermicelli on top.
  6. Lastly, add in 1 tbsp roughly chopped almonds, 1 tbsp roughly chopped pistachios, and 1 tbsp raisins and mix well. Turn off the heat once mixed well. It will get thicker off the heat as well.
  7. Transfer the pudding into a container and place in the fridge for around 2-3 hours to chill. We served our pudding chilled; however, it can also be served warm.
