This loaded fries recipe gives the classic a delicious twist by using sweet potato fries instead. Crispy fries topped with a rich cheese sauce make it a fun and comforting snack that's perfect for sharing with family and friends.

For our recipe, we have used Aviko Sweet Potato Fries provided to us by one of our partners, Standard and Origin (S&O). These frozen sweet potato fries are crispy, convenient, and easy to prepare, making them a great choice for quick and delicious meals.

Serving Size: 2 people

Ingredients:

For the fries

  • 350g Aviko Sweet Potato Fries
  • 2 cheese slices

For the cheese sauce

  • 30g butter
  • 20g flour
  • 1 cup milk
  • ¼ tsp black pepper powder
  • 1/8 tsp salt
  • 4 cheese slices

For the red sauce

  • 1 tbsp fried chicken chilli sauce
  • 1 tbsp garlic and chilli sauce

  • 1 tbsp onions finely chopped
  • 1 tsp chilli flakes

Instructions:

  1. Preheat the oven to 200°C for 10 minutes. Spread 350g Aviko Sweet Potato Fries in a single layer on a baking tray (we used an 11.5 inch by 9.9-inch tray) and bake for 20 minutes.
  2. While the fries are baking, prepare the cheese sauce. Melt 30g butter in a small pot over medium heat for about 1 minute.
  3. Add 20g flour and cook for 1 minute, stirring continuously.
  4. Gradually whisk in 1 cup milk until smooth and free of lumps. Cook over medium to high heat for about 2-3 minutes, or until the sauce begins to thicken.
  5. Add 1/8 tsp salt and ¼ tsp ground black pepper and whisk for another 2 minutes.
  6. Add 4 cheese slices and continue whisking for about 3 minutes or until the cheese has completely melted and the sauce is smooth. Switch off the heat.
  7. Divide the cheese sauce equally into two bowls. Leave one bowl as it is. Stir 1 tbsp fried chicken chilli sauce and 1 tbsp garlic and chilli sauce into the second bowl and mix well.
  8. Once the fries are cooked, arrange them on a 6 by 8-inch tray. Place 2 cheese slices over the hot fries and return them to the oven at 220°C (no need to preheat) for 8 to 10 minutes or until the cheese has melted.
  9. Spoon the plain cheese sauce evenly over the fries, followed by the spicy cheese sauce.
  10. Finish with 1 tbsp finely chopped onion and 1 tsp chilli flakes. Serve immediately while hot, as the fries can become soggy if left for too long.
