Chocolate Muesli Cookie Bar

 

These soft and chocolatey muesli bars are a quick and easy snack to make at home. They are great to have for breakfast, or even as a dessert.

For our recipe, we have used the Kellogg’s Chocolate Muesli, provided to us by one of our partners, VB Brothers.  This muesli mix is packed with almonds, pumpkin seeds, black raisins, black currents, cranberries, and chocolate.

Ingredients:

For the cookie bar

  • 6 tbsp peanut butter
  • 3 tbsp honey
  • 1 cup Kellogg’s Chocolate Muesli
  • 1/3 cup flour
  • 2 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ cup full cream milk
  • ½ cup chocolate chips

For topping

  • 2 cups of water
  • ½ cup chocolate chips
  • 2 tbsp full cream milk
  • 1 tbsp crushed roasted peanuts

 

Instructions:

  1. To a large bowl, add in 6 tbsp peanut butter, 3 tbsp honey, 1 cup of Kellogg’s Chocolate Muesli, 1/3 cup of flour, 2 tsp baking powder, ½ tsp cinnamon powder, and ½ cup full cream milk. Mix everything well together using a spatula until fully combined.
  2. Then add in ½ cup of chocolate chips and combine with the muesli cookie mixture.
  3. Line a square (we used a 7×7-inch) baking tray using baking paper and add in the muesli cookie mixture. Pat down using a spoon or spatula until evenly spread.
  4. Preheat the oven at 180 degrees for 10 minutes. Then bake it on the lowest rack for about 25 minutes or until it is evenly browned on top.
  5. While the muesli mixture is baking (around 15 minutes into baking), add 2 cups of water into a medium-sized pot, heat on low heat until steaming. This will take about 3 minutes 30 seconds.
  6. Then place a glass bowl on top of the pot (make sure that the bottom of the bowl does not touch the water in the pot). Add ½ cup of chocolate chips into the bowl along with 2 tbsp full cream milk. Stir and melt the chocolate on low heat for about 8 to 9 minutes.
  7. Once the muesli cookie bar is baked, while the melted chocolate is still hot, pour it over the top and smooth down using a spatula or spoon. Lastly, sprinkle 1 tbsp crushed roasted peanuts on top and let It cools at room temperature for about 1 hour before slicing and serving.
