Peri Peri Chicken Submarine

 

This is a light, fresh and truly delicious submarine, perfect for those who prefer an easy lunch or dinner.

For our chicken, we have used the Boss Brothers Peri-Peri Sauce - Original, provided to us by one of our partners, Kek Shop. This a tangy flavourful sauce that has 0% added sugar and cholesterol. It pairs very well with chicken, but can also be used for marinades, dips and vegetables.

Ingredients:

For the peri peri chicken

  • 180g boneless chicken breast (cut to ½ inch cubes)
  • ½ tbsp lemon juice
  • ½ tsp chilli powder
  • ½ tsp paprika powder
  • ½ tsp garlic powder
  • 1/3 tsp salt
  • ¼ tsp ground black pepper
  • ½ tbsp oil
  • 2 tbsp Boss Brothers Peri-Peri Sauce - Original

 

For assembling

  • 2 small submarine buns (6-7 inches long)
  • 4 tsp mayonnaise
  • 2 roughly chopped lettuce leaves
  • 2 slices of cheddar cheese
  • 4 thin round slices of onion
  • 4 slices of tomato

 

Instructions:

  1. To a bowl, add 180g boneless chicken breast (cut to ½ inch cubes) along with ½ tbsp lemon juice, ½ tsp chilli powder, ½ tsp paprika powder, ½ tsp garlic powder, 1/3 tsp salt and ¼ tsp ground black pepper.
  2. Mix everything together with a spoon and cover the bowl with plastic food wrap. Let the chicken marinate in the refrigerator for around 30 minutes.
  3. Once the chicken is done marinating, add ½ tbsp oil to a pan and heat it up for 30 seconds on medium heat. Add the chicken and cook for 6 to 7 minutes or until the chicken is fully cooked and browned on the outside. Make sure to stir frequently with a spatula so it gets cooked evenly.
  4. Then, reduce the heat to low and add in 2 tbsp Boss Brothers Peri-Peri Sauce - Original. Cook for another minute while mixing, so that all the chicken pieces are fully coated. Then remove from heat and set aside.
  5. To assemble, slice a small submarine bun (6-7 inches long) in half and spread 2 tsp mayonnaise on the bottom half. Then layer 1 roughly chopped lettuce leaf and half of the peri peri chicken on top.
  6. Then, top the chicken with 1 slice of cheese (you can tear up the cheese slice to fit nicely), 2 thin round slices onion, and 2 slices of tomato. Lastly, place the top half on the bun.
  7. Repeat the process one more time for the next sub and enjoy!
