Fried Chicken Sandwich

 

This juicy, homemade fried chicken sandwich is made with marinated chicken thighs, a delicious chicken sauce, cheddar cheese, and some fresh lettuce leaves. A must-try for whenever you crave crunchy chicken sandwiches; and it’s not that hard to make at home as you might think.

To make our crumb coating extra flavourful, we have used the Munchy’s Lexus Vegetable Crackers provided to us by one of our partners, Pyramid. These crunchy, vegetable flavoured crackers are both sweet and savoury, and they are so good to snack on during the day.

Ingredients: 

For the crumb coating 

  • 18 crushed Munchy’s Lexus Vegetable Crackers
  • ½ cup flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika powder 
  • 1 tsp ground black pepper
  • ½ tsp chilli powder 
  • 1/3 tsp salt

 

For chicken marination

  • 1 cup full cream milk 
  • 1 tbsp white vinegar 
  • 1 tbsp chilli garlic 
  • 1 tsp garlic powder 
  • ½ tsp paprika powder 
  • ½ tsp salt 
  • ¼ tsp ground black pepper 
  • 2 boneless chicken thighs (pounded to flatten) (around 100g each)

 

For the chicken sauce 

  • 4 tbsp chilli garlic sauce 
  • 1 tbsp dark soy sauce
  • 1 tbsp honey 
  • 1 ½ tsp lime juice
  • ½ tsp chilli flakes  

 

For the bun sauce 

  • 2 tbsp mayonnaise 
  • 2 tbsp chilli garlic sauce 
  • ¼ tsp garlic powder

 

For frying 

  • 4 cups of oil

 

For assembling 

  • 2 large buns
  • 2 tsp softened unsalted butter 
  • 2 roughly torn lettuce leaves 
  • 2 slices of cheddar cheese 

 

Instructions: 

  1. Using your hands, crush 18 Munchy’s Lexus Vegetable Crackers until they become coarse crumbs. Add the crushed biscuits to a large bowl along with, ½ cup flour, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika powder, 1 tsp ground black pepper, ½ tsp chilli powder, and 1/3 tsp salt. Mix well with a spoon and set aside. 
  2. To prepare buttermilk, add 1 cup full cream milk and 1 tbsp vinegar to a large bowl. Let it sit for 10 minutes or until it thickens to a cream consistency. Then, add 1 tbsp chilli garlic, 1 tsp garlic powder, ½ tsp paprika powder, ½ tsp salt, and ¼ tsp ground black pepper. Mix well with a spoon and set aside.
  3. Now add 2 small chicken thighs (around 100g each) in to the buttermilk mixture. We have pounded the chicken thighs beforehand to flatten them. Cover the bowl with plastic food wrap and set aside to marinate for 30 minutes. 
  4. Next, prepare the chicken sauce. For this, add 4 tbsp chilli garlic sauce, 1 tbsp dark soy sauce, 1 tbsp honey, 1 ½ tsp lime juice, and ½ tsp chilli flakes to a medium sized bowl. Mix well with a spoon and set aside.
  5. Then, in a small bowl, mix together 2 tbsp mayonnaise, 2 tbsp chilli garlic sauce, and ¼ tsp garlic powder to make the bun sauce. Set this aside as well. 
  6. Once the chicken is done marinating, add around 1 tbsp of the buttermilk mixture in to the crumb coating and mix it in. This will help create larger flour crumbs. Then, place the marinated chicken thighs in the crumbs and coat them well. You can press the crumbs down on the chicken to make it stick better. 
  7. To fry the chicken, heat up 4 cups of oil in a large pot on medium high heat for 10 minutes (to see if the oil is hot enough, you can add a small piece of chicken to the oil, it should float and have rapid bubbles around it). Then carefully add in 1 chicken thigh at a time, fry in the hot oil for 6-8 minutes or till its deep golden brown in colour. 
  8. Once fried, dunk the fried chicken thighs in the chicken sauce that was prepared earlier, coating with a thin layer of sauce on both sides. Set aside. 
  9. To toast the buns, slice the 2 buns from the middle horizontally (we used buns which were around 4-inches wide). Then spread ½ tsp softened unsalted butter on each slice. Heat up a pan on high heat and place one bun at a time on the pan, cut-side down, and toast for 15-20 seconds. The toasted side should be lightly golden and crispy. 
  10. Finally, to assemble the sandwich, spread 2 tsp of the bun sauce that was prepared earlier on both halves of the buns (on the toasted sides). Then place a roughly torn lettuce leaf on the bottom half of the two buns. 
  11. Next, place the coated fried chicken thighs on top of the lettuce, and top each with a slice of cheddar cheese. Lastly, place the top half of the buns on the very top. The fried chicken sandwiches are now ready to enjoy!
