Bifa Keks Brownies

 

This is a is very simple yet extra fudgy brownie recipe, made with cakes instead of flour. We also added both white and dark chocolate into the brownie batter, making it extra chocolatey with pockets of sweetness.

For the cake in this recipe, we used Bifa Keks Cocoa Marble Cake, provided to us by one of our partners, Day Food. Bifa Keks Cocoa Marble Cake is a soft sponge cake with a gooey, chocolate centre – a sweet, satisfying treat, perfect for a quick snack or dessert on the go.

Makes: one 8x8 brownie tray

 

Ingredients:

  • 6 Bifa Keks Cocoa Marble Cakes
  • 1/3 cup sugar
  • ¼ cup melted butter
  • 2 tbsp cocoa powder
  • 2 eggs
  • ¼ cup hot water
  • 1/3 cup dark chocolate chunks
  • ¼ cup white chocolate chunks

 

Instructions:

  1. First, cut the 6 Bifa Keks Cocoa Marble Cakes in half and add them into the mixer. Pulse the cakes at low speed for about 15-20 seconds until they turn into crumbs.
  2. Transfer the crumbs to a large bowl and add 1/3 cup sugar, ¼ cup melted butter, 2 tbsp cocoa powder, 2 eggs and ¼ cup hot water. Using a hand-held electric mixer, beat for 30 seconds or until it becomes a smooth batter.
  3. Then, add 1/3 cup dark chocolate chunks and ¼ cup white chocolate chunks, and fold them into the brownie batter.
  4. Preheat the oven at 180 degrees Celsius for 10 minutes.
  5. Pour the brownie batter into a tray lined with baking paper (we used an 8x8-inch square tray).
  6. Once the oven has preheated, place the tray in the middle rack and let it bake at 180 degrees Celsius for 18-20 minutes. The temperature of ovens varies depending on the brand, so be sure to check up on the brownie, especially during the last 5 minutes. When baked, the top of the brownie will have a dark brown sheen, and a toothpick inserted into the centre will come out with some chocolate on it.
  7. Once the brownie is baked, let it cool down at room temperature for about 15 minutes. Cut into squares and enjoy!
