Butter Biscuit Tiramisu

 

Tiramisu but with a buttery twist, this dessert will fulfill anyone’s sweet dreams. In this recipe, we have used butter cookies for the base, instead of the traditional ladyfingers or savoiardi biscuits. Flavourful, yet super easy and simple to make, this is sure to satisfy your sweet tooth cravings.

For the biscuits in this recipe, we have used Danish Butter Cookies, provided to us by one of our partners, Day Food. Made with simple ingredients like butter, sugar and flour, these biscuits are sweet and buttery with a rich, melt-in-your-mouth texture. If you don’t find these Danish Butter Cookies at a shop near you, contact 9981326 over Viber.

Serving size: 6-7

 

Ingredients:

  • 1 ¼ cup whipping cream
  • ½ cup cream cheese (at room temperature)
  • ½ tsp vanilla essence
  • 2 tbsp + 2 tsp sugar
  • 1 cup cold espresso or strong black coffee
  • 14 Danish Butter Cookies
  • ¼ cup cocoa powder

 

Instructions:

  1. In a bowl, using a hand mixer, beat 1 ¼ cup whipping cream at low speed for 4-5 minutes.
  2. Next, add in 2 tbsp + 2 tsp sugar and ½ tsp vanilla essence and continue beating at low speed for another 2-3 minutes, until stiff peaks form (stiff peaks mean that when you lift the beaters from the mixture, the peaks hold their shape). 
  3. Then, add ½ cup room temperature cream cheese and fold it in until fully combined. Set it aside.
  4. Dip 7 Danish Butter Cookies quickly into the prepared cold espresso or strong black coffee, one by one, and line the bottom of a tray (we used a 7x7 inch square tray). Be sure to not soak the biscuits in the coffee for too long as that will make them too soggy.
  5. Pour half of the cream mixture on top of the coffee-soaked biscuits and smooth the top with a spatula or back of a spoon.
  6. Dip the remaining butter cookies into the coffee and lay them on top of the cream mixture.
  7. Lastly, pour the remaining cream mixture and smooth the top again.
  8. Cover the top of the tray with plastic wrap and refrigerate it for 3-4 hours. It’s even better to let it refrigerate overnight to let the flavours develop more.
  9. When ready to serve, generously dust the top of the tiramisu with ¼ cup of cocoa powder.
