Strawberry Pudding

 

This is definitely one our favourite pudding recipes. It’s low effort yet creates a mouth-watering dessert. With the vibrant red colour of the strawberries, it looks stunning and will certainly be a crowd-pleaser!

For our recipe, we have used Pauls Flavoured Milk Beverage Strawberry, provided to us by one of our partners, S&O (Standard and Origin). These milk packets are specifically made for kids, containing essential calcium and protein for their growth and development, strengthening bones and teeth. They are also portioned and have no added sugar, making them great to grab on the go for your kids’ lunch for school – and for fun desserts like this too!

Ingredients:

For the pudding

  • 1 cup Pauls Flavoured Milk Beverage Strawberry
  • 1 tbsp corn flour
  • 2 tbsp sugar
  • 1/3 cup whipping cream

For the strawberry compote

  • 100g strawberries
  • 1 tbsp sugar
  • 1 tsp lime juice

 

Instructions:

  1. Into a small bowl, add 2 tbsp of Pauls Flavoured Milk Beverage Strawberry and 1 tbsp of corn flour. Mix well with a spoon until there aren’t any lumps. Set aside.
  2. Take a pot and add in the rest of the strawberry milk, 1/3 cup whipping cream, and 2 tbsp sugar. Mix them together using a spatula.
  3. Stir and cook the mixture for 1 minute on medium heat. Then, add in the corn flour mixture you have prepared earlier.
  4. Increase the heat to high after adding the corn flour.
  5. Continue stirring the mixture and cook for 6 minutes or until it is thick enough to coat the back of a spoon.
  6. Divide the pudding mix and pour into two dessert glasses (our glasses were 4-inches wide and 1.5-inches tall).
  7. Put them in the refrigerator for 1 hour to cool down and set.
  8. In the meantime, for the strawberry compote, chop 100g of strawberries into small pieces and add them to a saucepan.
  9. Then, add in 1 tbsp sugar and start cooking the strawberries on medium heat for 1 minute. Make sure to keep stirring to avoid the strawberries from burning.
  10. Increase the heat to high and add 1 tsp lime juice. Keep stirring for 3 minutes, until the strawberries become soft and create a sauce. Let it cool down for around 10 minutes.
  11. Take out the strawberry pudding glasses from the refrigerator.
  12. Divide the strawberry compote equally into two parts and pour it on the top of the pudding. You can use a spoon to even out the top before serving.
