PB Chocolate Cracker Sandwich

 

Ever had too much leftover crackers, and no idea how to use them? Here is a simple way you can spice up those crackers and make a fun snack – great to serve at gatherings too!

For this recipe, we have used Kerk Special Cream Crackers provided to us by one of our partners, Silver Quest. These crackers have been a favourite of us Maldivian for decades. They’re buttery, sweet, and salty with no preservatives and artificial colourings, making them perfect for breakfast or teatime.

 

Serving size: 4

Ingredients:

  • 12 Kerk Special Cream Crackers
  • 8 tsp creamy peanut butter
  • 100g dark cooking chocolate
  • 5 tbsp whipping cream
  • 1 tbsp peanuts

 

Instructions:

  1. First, spread 1 tsp of peanut butter on a Kerk Special Cream Cracker. Then, place another cracker on top.
  2. Spread another 1 tsp of peanut butter on top of the second cracker and place the third cracker on top.
  3. Repeat this process for the rest of the crackers. When you’re done, you should have 4 peanut butter cracker sandwiches.
  4. Next, finely chop up 1 tbsp of peanuts. Set them aside for later.
  5. Then, roughly chop 100g of dark cooking chocolate.
  6. Add the chopped chocolate to a small pot along with 5 tbsp of whipping cream.
  7. Stir and cook on low heat for 2-3 minutes or until the chocolate is fully melted and mixed in with the whipping cream. Pour the melted chocolate cream into a bowl and let it cool for 10-15 minutes.
  8. Dip the crackers you have prepared earlier into the chocolate cream. Using a fork or spoon, roll the cracker sandwiches to fully coat them with the chocolate on all sides.  
  9. Place the chocolate-coated cracker sandwiches on a serving plate. Sprinkle the chopped peanuts on top of each one evenly.
  10. Refrigerate for 2 hours to let the chocolate harden and set before serving.
