Spicy Kimchi Ramen

 

Ramen is one of the trendier and more popular things to eat these days. While there are many ways to prepare ramen, today we have a recipe for spicy kimchi ramen.

As for the ramen, we have used the Ottogi Kimchi Ramen, provided to us by one of our partners, MHA. This ramen has the perfect amount for a serving, with a kimchi flavored seasoning pack. The flavor is also not so over powering, so it is really great to have with other toppings such as kimchi, eggs or green onion, etc. 

 

Serving size: 1

 

Ingredients:

  • 1 pkt Ottogi Kimchi Ramen
  • 2 cups water
  • 2 spring onion bulbs (white part at the base)
  • 2 cloves garlic
  • 1 tbsp vegetable oil
  • 1 tsp chili flakes
  • ½ tbsp light soy sauce
  • 1 tsp sesame oil
  • ½ tsp sugar
  • 1 Ottogi Kimchi Ramen seasoning packet

Toppings

  • 1 spring onion (leaves only)
  • ¼ tsp sesame seeds
  • 1 fried egg

 

Instructions:

  1. To start off, add 2 cups water to a pot and boil the Ottogi Kimchi Ramen noodles for 2 minutes or until they are soft. Drain and keep aside. Keep the seasoning aside for later use too.
  2. Next, slice up the bulbs (white parts) of the spring onions (keep the leaves for garnish later). Then finely chop the garlics as well.
  3. To a saucepan, add in 1 tbsp vegetable oil and heat it up.
  4. After it is heated, add in the garlic and sliced bulbs of the spring onion. On medium low heat, sauté them for 2 minutes or until light golden brown in color.
  5. Then add in the chili flakes, light soy sauce, sesame oil and sugar. Mix until everything is well combined. You can always adjust the heat level by adding either more or less of the chili flakes.
  6. After that, add in the seasoning packet of the kimchi ramen packet and mix again.
  7. Once the sauce is well mixed, add in the noodles you have boiled earlier to the pan. Then combine everything together, making sure the sauce is well incorporated with the noodles.
  8. Remove from heat and add the ramen to a plate or a bowl.
  9. As for the topping, chop up the leaves of one spring onion and sprinkle on top of the ramen. Sprinkle the sesame seeds. Place a fried egg on top. If preferred, you can replace the fried egg with boiled eggs as well.
