Rice Pudding

 

This Rice Pudding is a simple dish made with rice, milk and sugar. Our version is laced with the lovely flavours of vanilla and cinnamon and is topped with raisins and almonds.

Making rice pudding requires a lot of milk and in our recipe, we’ve used Luna Full Cream Milk Powder, which was provided to us by one of our partners Miyami Traders. The milk is slightly sweet and has a buttery creamy taste making it ideal for not only desserts like these, but also for enjoying with breakfast cereals, coffees and teas.

 

Serves: 4-6

 

Ingredients:

  • 2/3 cups uncooked basmati rice
  • 1 ½ cups water (to cook the rice)
  • 3 inches cinnamon
  • 1/3 tsp. salt
  • 1 cup Luna Full Cream Milk Powder
  • 4 cups hot water (to mix with the milk powder)
  • 2/3 cup sugar
  • ½ tsp. vanilla essence
  • ½ tsp cinnamon powder
  • 3 tbsp raisins
  • 2 tbsp thinly sliced almonds

 

Instructions:

  1. Add the rice to a grinder and grind until the grains are just slightly smaller (6 pulses on a grinder). Then wash the rice thoroughly and drain.
  2. Add the rice to the pot along with water, salt and cinnamon.
  3. Bring the mixture to a boil with the lid on. Then bring the heat down to a simmer and then cook the rice until all water evaporates. For us this took around 12 minutes.
  4. While the rice is cooking, add the Luna Full Cream Milk Powder and hot water to a jug. Then mix well until all the milk powder dissolves.
  5. Once the rice is cooked, pour the milk mixture into the pot. Add the sugar. Mix to combine.
  6. Cook the mixture on medium heat, stirring occasionally at the beginning and frequently towards the end and even nonstop at the very end. Cook for 30 minutes or until the mixture is thickened to the level that you can see the bottom of the pan when you draw a straight line with a spatula and the line disappears a bit slowly. Towards the end of the cooking, smash the rice against the sides of the pan when you mix.
  7. Add the vanilla essence and cook while mixing for 1 minute.
  8. Pour the mixture into a large serving tray or bowl (or a couple of smaller bowls).
  9. Using a small sieve, distribute the cinnamon powder evenly on the top. Then sprinkle the raisins and sliced almonds on top of the cinnamon. You can serve this dessert either warm or chilled.
