Spicy Chicken Nachos

 

Topped with a spicy minced chicken and cheese mix, these nachos are a sure win for your next get together, especially if you are serving it to people who like spicy food.

Making these nachos extra spicy is the Peri Peri flavoured Makino Nacho Chips, which we got from one of our partners ADK General Trading. These nachos are a great snack on their own for whenever you are feeling a bit peckish. However, we particularly love them because they are gluten free and has zero trans-fat, making them a healthier alternative to the other nacho chips out there.

Serves: 4-5

 

Ingredients:

  • 1 medium onion
  • 4 garlic cloves
  • 2 tbsp. olive oil
  • 225g minced chicken
  • 6 tbsp. tomato paste
  • ½ tsp. chilli powder
  • ½ tsp. black pepper powder
  • ½ tsp. cumin powder
  • 2/3 tsp. salt
  • ½ tsp. sugar
  • 1 tsp. mixed herbs
  • ¼ cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 small packets Makino Nacho Chips Peri Peri (total 200g)
  • 1 tbsp. chopped coriander leaves

 

Instructions:

  1. Chop the onion and garlic finely.
  2. Heat the oil in a pan. Add the onion and garlic and sauté for 2 minutes on medium high heat.
  3. Then add minced chicken and sauté for 4 minutes on high heat.
  4. Add tomato paste, chili powder, black pepper, cumin powder, salt, sugar, mixed herbs and water. Cook for another 4 minutes.
  5. Add the shredded cheddar cheese and shredded mozzarella cheese on top of the chicken mixture and cover the pan with a lid. Cook on medium low heat until the cheese melts (2-3 minutes).
  6. Line a tray with baking paper (we used an 8 by 11 inch one) and add the Makino Nacho Chips Peri Peri. Pour the chicken mixture on top of the nachos directly from the pan.
  7. Add the chopped coriander leaves on top and serve while hot.
