Sausage Fried Rice

 

A quick, easy, yet very flavourful fried rice recipe for busy times.

 

Serves: 2

 

Ingredients:

  • 2/3 cup uncooked rice
  • 1 1/3 cups water
  • 2 ½ tbsp. oil (divided)
  • 3/4 tsp. salt (divided)
  • 1 large onion
  • 3 garlic cloves
  • 2 Thai red chillies
  • ¼ scotch bonnet pepper
  • 2/3 cup thinly sliced carrots
  • 2/3 cups thinly sliced cabbage
  • 5 sausages (1 ¼ cups when thinly sliced)
  • 2 eggs
  • 1 tbsp. dark soy sauce
  • 2 tbsp. oyster sauce
  • ¼ tsp. ground black pepper

 

Instructions:

  1. Wash the rice thoroughly and then drain.
  2. Add the rice to a pot along with 1/2 tsp. salt, 1 1/3 cup water and 1/2 tbsp. oil. and cook for 7 minutes on high heat uncovered. Then put the lid on and cook for 8 minutes on medium low heat.
  3. Once the rice is cooked, add it to a plate or a bowl and keep it in the fridge while you prepare the rest of the ingredients.
  4. Finely chop the onion, garlic, red chilies and the scotch bonnet pepper.
  5. Slice the carrot and cabbage thinly.
  6. Thinly slice the sausage diagonally.
  7. Heat 2 tbsp. of oil in a large frying pan.
  8. Add onions, garlic, red chili, scotch bonnet pepper and stir-fry over high heat for 2 minutes.
  9. Add the sausages and stir-fry for 4 minutes or until the sausages turn light brown.
  10. Add the carrot and cabbage and stir-fry for 4 minutes.
  11. Then push everything to one side of the pot and add the eggs. Wait until the eggs begin to set. For us this took 1 minute.
  12. Once the egg is almost set, stir and fold the eggs, breaking it up and mixing it together with the other ingredients.
  13. Add the cooked rice, dark soya sauce, oyster sauce and pepper, and ¼ tsp. salt and mix it well and stir fry for about 2 minutes and that’s it.
