Zeeba Rice Bowl

 

This is a flavour-packed rice bowl, filled with chicken and different kinds of vegetables. It’s a very filling meal so it works great for either lunch or dinner.

For the rice, we have used Zeeba Premium Basmati Rice, provided to us by one of our partners, Pyramid. Zeeba basmati rice is grown in the foothills of the Great Himalayas and is known for its exquisite aroma, extra-long grains, and delicious taste. Our kitchen definitely smelled amazing when we cooked the rice, making the dish even more exciting!

Ingredients:

For the chicken

  • 150g boneless chicken
  • ½ tsp chili powder
  • 1/3 tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp cumin powder
  • 1 tbsp yoghurt
  • ½ tsp lime juice (freshly squeezed)
  • 1 ½ tbsp oil

For the rice

  • ½ cup Zeeba Premium Basmati Rice
  • 1 cup water
  • ½ tsp salt

For the sauce

  • 2/3 tsp lime juice (freshly squeezed)
  • 1 tbsp light soy sauce
  • ½ tsp sliced green chili

Toppings

  • ¼ cup sliced carrots (around 1 ½ inches in length)
  • 1/3 cup chopped lettuce
  • ¼ cup sweet corn

 

Instructions:

  1. Wash ½ cup Zeeba Premium Basmati Rice and drain. Add it to a pot along with 1 cup water and ½ tsp salt.
  2. Cook the rice on high heat for 7 minutes. At this point, the water will be at the same level as the rice.
  3. Then, cover the pot and cook the rice for another 7-8 minutes on low heat, until there is no water left. When cooked, the rice should be soft and fluffy.
  4. Defrost 150g boneless chicken. Then, cut it to small cubes of around ½-inches.
  5. Season the chicken with ½ tsp chili powder, 1/3 tsp salt, ¼ tsp ground black pepper, ¼ tsp cumin powder, 1 tbsp yoghurt, and ½ tsp freshly squeezed lime juice. Make sure that the seasoning evenly coats the chicken.
  6. Add 1 ½ tbsp of oil to a pan and heat it up. Then, add in the chicken and sauté on high heat for 10 minutes or until golden brown in colour. Remove from heat.
  7. To make the sauce, add 1 tbsp light soy sauce, 1 tsp of freshly squeezed lime juice, and the sliced green chilli to a small bowl. Give it a mix to combine everything.
  8. Now, to assemble the rice bowl. First, add around ¾ of the cooked rice to a medium-sized bowl. Ours was 7 inches in width and around 3 inches in depth.
  9. Place the cooked chicken on top of the rice, on one side of the bowl.
  10. Then, place the ¼ cup sliced carrot, ¼ cup sweet corn, and 1/3 cup chopped lettuce on the other side, spread over the rice.
  11. Lastly, drizzle the sauce you have prepared earlier on top and serve.
