Tharukaaree Kirugarudhiya

 

Few things can be as good as a well made kirugarudhiya, and this time, we have here a recipe for a mixed vegetable kirugarudhiya.

In our recipe we’ve used Bonduelle Mixed Vegetables that we got from one of our partners STO (State Trading Organization). Bonduelle is a brand that offers high-quality vegetables prepared in all forms such as canned, frozen and fresh. Bonduelle Mixed Vegetables includes a great mix of vegetables including carrot, green beans and green peas.

 

Serves: 3-4

Ingredients:

  • 1 medium onion
  • 2 garlic cloves
  • ½ inch piece of ginger
  • ¼ cup sliced smoked tuna
  • 15 curry leaves
  • 6 inches pandan (cut into two pieces)
  • ½ scotch bonnet pepper
  • ½ tsp. turmeric powder
  • 1 tsp. salt
  • 1 cup thin coconut milk (mix 1 cup water and ½ cup packet coconut milk)
  • 440g Bonduelle Mixed Vegetables
  • ½ cup thick coconut milk

 

Instructions:

  1. Thinly slice onion, garlic, ginger and smoked tuna.
  2. Add the sliced onions, garlic, ginger, curry leaves, pandan, scotch bonnet pepper, smoked tuna, turmeric, salt and thin coconut milk to a pot. 
  3. Mix everything well, put the lid on and let the mixture cook on medium low heat for around 7 minutes or until the onions soften.
  4. Strain the Bonduelle Mixed Vegetables and add it to the pot. Continue cooking for 5 more minutes.
  5. Then add the thick coconut milk, mix well again and cook for 1 minute and that’ it.
