Tea Loaf

 

Tea Loaf is a traditional English bread made with dried fruits, that’s served sliced with butter. And as the name suggests, the loaf has tea in it.

In our recipe we’ve used Mahmood Ceylon Black Tea which we got from one of our partners MHA. The tea isn’t so bitter like most teas out there and has a slightly sweet after taste. It also gave our tea loaf a really nice depth of flavour.

Serves: 5-6

Ingredients:

  • ½ cup full cream milk
  • 6 Mahmood Ceylon Black Tea bags
  • ½ cup raisins
  • 1 cup flour
  • 1 ½ tsp. baking powder
  • ¼ tsp. cinnamon powder
  • 2/3 cup brown sugar
  • 2 tbsp. melted butter
  • 2 eggs
  • 1/3 cup chocolate chips

 

Instructions:

  1. Add milk and Mahmood Ceylon Black Tea bags to a saucepan and bring to a boil.
  2. Switch off the stove and remove the tea bags. Add raisins in to the milk and keep aside to cool the mixture down.
  3. Sift flour, baking powder and cinnamon into a large bowl.
  4. To the same bowl, add brown sugar and give it a good mix. Then add melted butter, eggs, chocolate chips, and the tea mixture. Combine everything with a spatula.
  5. Prepare an 8.5 inch loaf pan by rubbing around a teaspoon of butter on the bottom and sides. Then, place a baking paper sheet at the bottom of the tray, pressing it down onto the butter; leave an overhang for easy removal.
  6. Preheat the oven at 180 degrees Celsius.
  7. Add the batter into the prepared tray, smoothen the top and bang the tray on the counter to get rid of any air bubbles. Place the cake on the middle rack of the oven and bake at 180 degrees Celsius for one hour or until a toothpick inserted into the center comes out clean.
  8. When baked, remove the tray from the oven. However, allow the loaf to cool down completely before slicing as otherwise the loaf would break apart.
