Strawberry Biscuit Pudding | Lonumedhu

Strawberry Biscuit Pudding

This is a simple no-bake dessert made with layers of Marie biscuits, whipped cream, fresh strawberries, and strawberry syrup. It’s sweet, creamy, and best served chilled.

For our recipe, we have used Peek Freans Marie Biscuits provided to us by one of our partners, Day Food. These biscuits are great for making simple desserts like biscuit puddings and cheesecakes.

Serving Size: 5.5-inch square tray

Ingredients:

  • 1 cup whipping cream
  • 1 tbsp icing sugar
  • 1 tsp vanilla essence
  • ½ cup full cream milk
  • 20 Peek Freans Marie Biscuits
  • 13-14 small strawberries (thinly sliced)
  • 4 tbsp strawberry syrup

For topping (optional)

  • 2 strawberries (1 cut in half)
  • 1 tsp strawberry syrup
  • Crushed Peek Freans Marie Biscuit

Instructions:

  1. Place 1 cup whipping cream in the freezer for 10 minutes to chill. Then, add it to a large bowl along with 1 tbsp icing sugar and 1 tsp vanilla essence. Using a hand mixer, beat for 2 minutes and 50 seconds, or until the cream is whipped.
  2. To assemble the pudding, spread ¼ cup of the whipped cream mixture evenly over the bottom of a tray (we used a 2.5 inch deep, 5.5-inch square tray).
  3. Pour ½ cup full cream milk into a bowl. Dunk each Peek Freans Marie Biscuits in the milk for 4 seconds and arrange them over the whipped cream. Use 5 biscuits for each layer, breaking one if needed to fill any gaps.
  4. Arrange the sliced strawberries over the biscuits to create a strawberry layer. Drizzle 1 tbsp strawberry syrup over the strawberries, then spread ½ cup of the whipped cream mixture on top.
  5. Repeat the layers until you have 4 biscuit layers, 4 strawberry layers, and 4 layers of strawberry syrup, using the remaining biscuits, strawberries, syrup, and whipped cream mixture.
  6. For the final layer, spread ½ cup whipped cream mixture evenly over the top. Optionally, you can decorate with strawberries, placing one whole strawberry with another cut in half beside it.
  7. Drizzle the remaining 1 tsp strawberry syrup over the strawberries and some crushed Peek Freans Marie Biscuit for decoration. Refrigerate for at least 1 hour before serving. This pudding is best served chilled.
