Shrimp Fried Rice

 

This shrimp fried rice is easy to prepare and really flavourful. Our recipe is quite spicy too; so those of you who like your food mild, feel free to cut down on the chilli powder and paste.

In our recipe we’ve used Zeeba Premium Basmati Rice, which we got from one of our partners Pyramid. With Zeeba Premium Basmati Rice, the grains are long and when cooked it has a really nice aroma and taste. Apart from fried rice dishes such as this, we think the rice would be great for biriyanis and pulaos.

 

Serves: 2-3

 

Ingredients:

Cooking the rice

  • 2/3 cup uncooked Zeeba Premium Basmati Rice
  • ½ tsp. salt
  • 11/3 cups water
  • 1 tsp. olive oil

Marinating the shrimp

  • 200g medium shrimps (weighed after defrosting)
  • ¼ tsp. turmeric powder
  • ½ tsp. chilli powder
  • ½ tsp. soy sauce

Making the fried rice

  • 1 medium onion
  • 4 garlic cloves
  • 2 green chillies
  • ½ bell pepper
  • ½ carrot
  • 1 tsp. soy sauce
  • 2 tbsp. oyster sauce
  • 2 tsp. chilli paste
  • ¼ tsp. salt

 

Instructions:

  1. Add Zeeba Premium Basmati Rice to a pot and rinse well until the water runs clear.
  2. To the same pot, add 1/2 tsp salt, 1 1/3 cup water, 1 tsp. oil and cook for 8 minutes on high heat without the lid on. After that, put the lid on and cook for another 8 minutes on medium low heat. Remove the cooked rice to a plate and keep it in the fridge so that it can cool down while you prepare the other ingredients.
  3. Add the shrimps, turmeric, chili powder and soy sauce to a bowl. Give it a good mix and keep it aside so that the shrimps can marinate.
  4. Chop the onion and garlic. Slice the green chilies in half, and slice the bell pepper and carrot in to strips.
  5. Heat 1 tbsp. oil in a pan and stir fry the shrimps on medium heat for 5 minutes. Remove from heat and keep aside.
  6. To the same pan add 1 tbsp. oil and sauté the onion, garlic and green chili for a minute on medium high heat.
  7. Then add the bell pepper and carrots and stir fry for 4 minutes or until the vegetables become slightly soft.
  8. Add the shrimps, soy sauce, oyster sauce, chili paste, salt and cooked rice and combine well for a minute and that’s it.
