Shortcut Tres Leches Cake

 

Tres Leches Cake or three milk cake is one of our all-time favourite cakes. Making it involves the baking of a sponge or butter cake, soaking it with the three milk mixture and topping it with whipped cream. All of this could take a bit of time and energy, so we’ve developed a fuss free shortcut version of the cake that is just as wonderful and delicious.

One reason why this recipe is fuss free is because instead of baking a cake from scratch we are starting it off with a cake mix.

We used Domo Vanilla Flavour Cake Mix, which we got from one of our partners ADK General Trading. The cake mix yields a cake that’s spongy, fluffy and moist, and there’s a good amount of vanilla in there too without it being overpowering. As for the whipped cream topping, you can whip the cream yourself or take the easy route and just use a whipped cream spray bottle like we did.

Instructions:

  • 1 Domo Vanilla Cake Mix
  • 3 eggs
  • ½ cup oil
  • 1 cup water
  • 2/3 cup condensed milk
  • 2/3 cup evaporated milk
  • 2/3 cup full cream milk
  • 1 tsp. vanilla essence
  • 1 whipped cream spray can

Instructions:

  1. Prepare a 9 inch by 13 inch cake tin by rubbing 2 teaspoons of oil on the bottom and sides. You can just use your fingers for this, after thoroughly washing them of course. Then dust the bottom and sides of the tin with around a tablespoon of plain flour.
  2. Preheat the oven to 180 degrees Celsius.
  3. Add the Domo Vanilla Cake Mix, eggs, water and oil to a large bowl. Use your hand held electric mixer to beat the mixture on low for 1 minute and then at high for 5 minutes.
  4. Pour the mixture into the cake tin you prepared before. Place the tin on the middle rack of the preheated oven and bake for 45 minutes or until a tooth pick inserted into the center comes out clean.
  5. Allow the cake to cool in the tin completely.
  6. When the cake has cooled completely, use a fork to make holes on top of the cake. Have the holes go halfway deep and quite close together. We did it in zigzag rows, leaving around ½ cm in between.
  7. Combine the condensed milk, evaporated milk, full cream milk and vanilla essence in a bowl. Then pour this mixture over the cake. We used a tablespoon for this, pouring a little and then letting it sink in a little before repeating.
  8. Cover the cake and keep it in the fridge for at least an hour so that the cake can absorb all that milk. You can keep it for longer too.
  9. Finally, spread the whipping cream on top of the cake and decorate it with any fruits or nuts you like.
