Sevunaru Kiru

 

Sevunaru Kiru or Seviyan Kheer as it’s usually called in the Indian subcontinent is a vermicelli and milk dessert that’s infused with cardamom and topped with nuts and dried fruits.

Since it’s a milk based dessert, the milk you use to make the dessert is important as it can contribute to both the flavor and creaminess of it.

Here we have used Lactel UHT Whole Milk which we which we got from one of our partners S&O (Standard & Origin). Branded as No.1 in France, Lactel UHT Whole Milk is made from 100% cow’s milk and is packed with essential nutrients such as calcium. We found it to be pleasantly buttery and creamy with a slight sweetness to it.

Serves: 3-4

 

Ingredients:

  • 30 grams vermicelli (3/4 cup when broken into approx. 2cm strips)
  • 1 tbsp. ghee
  • 1 liter Lactel UHT Whole Milk
  • ½ cup sugar
  • 1/3 tsp. cardamom powder
  • 7 almonds (thinly sliced)
  • 1 tbsp. raisins

 

Instructions:

  1. Break the vermicelli into small pieces. We broke ours in to roughly 2cm pieces.
  2. Heat ghee in a large pot and once the ghee melts, add the vermicelli and fry for 3 minutes or until the vermicelli looks golden brown.
  3. Add milk to the pot, mix to combine and bring the mixture to a boil. Then let the mixture simmer on medium heat for 15 minutes. Keep an eye on it and stir occasionally to make sure none of it is sticking to the bottom of the pot.
  4. Add the sugar, mix to combine and let the mixture simmer on medium heat for another 10 minutes. Keep stirring it to prevent anything from sticking to the bottom of the pot.
  5. Add the cardamom powder, almonds and raisins. Mix to combine and let the mixture cook on low heat for another 5 minutes while stirring and that’s it. You can serve it warm or chilled.
