Peri Peri Chicken

 

Peri Peri Chicken is a spicy, flavour-packed dish that’s perfect for those who love a bit of heat. The chicken is marinated in a mix of spices and peri peri sauce, then baked until tender and juicy.

For our recipe, we have used Boss Brothers Peri Peri Sauce - Hot, provided to us by one of our partners, Kek Shop. This sauce brings the perfect balance of spice and tang, giving the chicken a bold and fiery flavour. You can also use it as a dip, a marinade for other meats, or to add some heat to grilled vegetables.

Ingredients:

  • 4 chicken drumsticks (250-275g)
  • 2 tbsp lemon juice
  • 2 tsp paprika
  • 2 tsp chilli flakes
  • 2 tbsp olive oil
  • ½ cup Boss Brothers Peri Peri Sauce - Hot
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 2 tsp olive oil (for coating the chicken)
  • 1 tsp finely chopped fresh parsley (optional)

Instructions:

  1. Defrost 4 chicken drumsticks (250-275g) and remove the skin. Make 2 cuts on each piece diagonally on both sides. Set aside.
  2. Into a large bowl, add 2 tbsp lemon juice, 2 tsp paprika, 2 tsp chilli flakes, 2 tbsp olive oil, ½ cup Boss Brothers Peri Peri Sauce – Hot, ¼ tsp ground black pepper and ¼ tsp salt. Mix using a spoon.
  3. Add the chicken drumsticks in, rub and coat them. You can use your fingers or a spoon. Cover the bowl using food wrap and set aside in the fridge for at least 1 hour or overnight.
  4. Pre heat the oven at 200 degrees Celsius for 10 minutes.
  5. Take the marinated chicken from the fridge. Carefully cover the drumsticks with 2 tsp olive oil using a brush. Make sure to get all the sides and lay them on a baking tray (we used an 11.5 inch by 9.9 inch tray) with some space in between each. Bake for 35 to 40 minutes, or until golden in colour, flipping it halfway using a tong.
  6. Once they are done, you can serve them after adding 1 tsp finely chopped fresh parsley on top.
