Oatmeal Muffins

 

Not only are these oatmeal muffins quick and easy to make, they are so much healthier than regular wheat-based muffins and equally as scrumptious. Serve these for breakfast or as an afternoon snack.

Our oatmeal muffins are sweetened with Al Shifa Acacia Honey, which we got from one of our partners MHA. The Acacia honey is sourced from Acacia flowers, and its mild sweet taste makes it great for breakfasts as well as desserts.

 

Makes: 6

 

Ingredients:

  • 1 cup rolled oats
  • 3 small ripe bananas (3-inch bananas)
  • 1 egg
  • ¼ cup Al Shifa Acacia Honey
  • ¼ cup milk
  • ¼ tsp. vanilla essence
  • 1 tsp. baking powder
  • 1/3 tsp. cinnamon powder
  • ¼ cup dark chocolate chips

 

Instructions:

  1. Add the oats to a grinder and grind until it becomes a powder. For us this took 10 seconds.
  2. Using a fork, mash the bananas in a large bowl.
  3. Add the egg, honey, milk and vanilla essence and mix well.
  4. Add the oats, baking powder, cinnamon powder and chocolate chips and combine well.
  5. Pre-heat oven at 180 degrees.
  6. Place muffin liners in the muffin tray (our tray had the capacity to make 6 muffins).
  7. Pour the mixture equally into the muffin liners.
  8. Bake the muffins for 25 minutes or until golden.
