Mutton Curry

 

The meat just falls off the bone in this flavour packed mutton curry. There are two steps to getting the meat this juicy and tender. First is the marination step in which lime and ginger tenderizes the meat prior to cooking. Then there’s the long cooking time which helps break down the fibers of the meat.

In our recipe we’ve used Currymia Frozen Bone In Mutton Cubes which we got from one of our partners Standard & Origin (S&O). The meat has a fresh, clean smell and when cooked, it’s not rubbery at all.

 

Serves: 2

 

Ingredients:

For the marinade

  • 1 tsp. grated ginger
  • 1 tsp. grated garlic
  • 450g Currymia Frozen Bone In Mutton Cubes
  • ½ tsp. salt
  • ½ lime

For the curry

  • 2 large onions
  • 1 tomato
  • 1 scotch bonnet pepper
  • 4 tbsp. ghee
  • 2 tsp. grated garlic
  • 2 tsp. grated ginger
  • 10 curry leaves
  • 2 bay leaves
  • 1 tsp. chilli powder
  • 2 tsp. cumin powder
  • 1 ½ tsp. coriander powder
  • ¼ tsp. turmeric powder
  • ½ tsp. salt
  • 2 tbsp. tomato paste
  • 1 ½ cup water
  • ¼ cup chopped coriander leaves

 

Instructions:

  1. Grate the garlic and ginger (you need 1 tsp. of each for the marinade and 2 tsp. each for the curry).
  2. Wash the mutton pieces thoroughly. And pat dry the mutton.
  3. Place the mutton in a bowl, add lime juice, grated garlic and ginger with salt and mix everything together. Cover and keep in the fridge to marinate for around 15 minutes.
  4. Thinly slice the onion and tomato. Cut the scotch bonnet in half.
  5. Heat the pot on medium high heat and add the ghee, along with the onions, garlic, ginger, scotch bonnet, curry leaves, bay leaf and sauté for about 5 minutes or until the onions soften and start to get a little color.
  6. Then add chili powder, cumin powder, coriander powder, turmeric powder, salt, tomato paste and mix for half a minute.
  7. Add mutton, tomato slices and stir well and cook for about a minute.
  8. Mix in water, cover and let it cook on medium high heat for about 25 minutes. Then lower the heat and let is cook for 20 minutes or until the meat is tender.
  9. Remove lid, add coriander leaves and give it a good stir and remove from heat.
