Muesli Cookies

 

These muesli cookies are a quick and easy treat that come together with just a handful of ingredients. They’re naturally sweetened with a mix of brown sugar and banana, lightly spiced with cinnamon, and packed with bits of fruit, nuts, and chocolate in every bite. The texture is soft with a slight chew, making them perfect for a simple snack or a light dessert.

For our recipe, we have used Kellogg’s Muesli – Fruit, Nut & Seeds provided to us by one of our partners, Day Food. This adds a nice mix of textures and flavour without needing much extra effort.

Yield: 9 cookies

 

Ingredients:

  • ½ cup finely mashed bananas
  • 1 ½ cup Kellogg’s Muesli – Fruit, Nut & Seeds
  • ¼ cup brown sugar
  • ½ tsp baking powder
  • ¼ tsp cinnamon powder
  • 1/8 tsp salt
  • 1 tsp vanilla essence
  • 1 tbsp melted unsalted butter
  • 50g dark chocolate chips

 

Instructions:

  1. To a large bowl, add ½ cup finely mashed banana and 1½ cups Kellogg’s Muesli – Fruit, Nut & Seeds. Mix using a spatula and let it rest for 10 minutes so the muesli can absorb the moisture from the banana. In the meantime, line a baking tray with baking paper and set aside.
  2. Add ¼ cup brown sugar, ½ tsp baking powder, ¼ tsp cinnamon powder, and 1/8 tsp salt to the bowl. Mix well using a spatula, folding gently to combine.
  3. Add 1 tsp vanilla essence and 1 tbsp melted unsalted butter, then mix again. Add 50g dark chocolate chips and mix until everything is evenly incorporated. Preheat the oven to 180°C for 10 minutes.
  4. Scoop about 2 tbsp of the mixture and place it onto the prepared tray. Flatten slightly using a spoon or spatula into roughly a 2½-inch round with about 1½ cm thickness. Repeat until all the mixture is used.
  5. Bake at 180°C for about 20 minutes. Remove from the oven and let the cookies cool and firm up for at least 10 minutes before serving.
