Milk Powder Cake

 

This is a very simple and truly delicious cake recipe. The magic ingredient here is milk powder, which makes the cake really moist and tender with a great slightly caramelized taste.

In our recipe we used Luna Full Cream Milk Powder which we got from one of our partners Miyami Traders. Made from pure cow's milk and containing 28 vitamins and minerals, the milk provides support to the brain and body for a strong and healthy life.

 

Ingredients:

  • ½ cup Luna Full Cream Milk Powder
  • 1 cup flour
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ¼ cup softened butter
  • ½ cup sugar
  • 2 eggs
  • 1/3 cup milk (1 tbsp. Luna Full Cream Milk Powder mixed in 1/3 cup water)
  • ½ tsp. vanilla essence

 

Instructions:

  1. Prepare a 7 inch round baking tray by first rubbing a teaspoon of butter or oil on the bottom and sides. Then cut a baking paper sheet into a circular shape of the same size as the bottom of the tray, and cover the bottom of the tray with it.
  2. Preheat the oven at 175 degrees Celsius (you’ll have to do this at least 10 minutes before baking).
  3. Sift Luna Full Cream Milk Powder, flour, baking powder and salt into a bowl. Set aside.
  4. Add softened butter to a large bowl and mix on medium speed using a hand mixer until it becomes creamy. For us this took around 10 seconds.
  5. Then add the sugar to the bowl and mix on medium speed until combined. For us this took around a minute.
  6. Add one egg, mix until combined and then add the other egg and mix again until combined. Then continue mixing on medium speed until the mixture becomes fluffy and light in colour. For us this took around 2 minutes.
  7. Add around a third of your flour mixture to the bowl and gently fold until combined. You can use a wooden spoon or a spatula for the folding. Then add half of your milk and fold until just combined again. Continue adding and folding in the flour mixture and milk this way until you run out. The last addition has to be flour.
  8. Add the vanilla essence and gently fold until combined.
  9. Pour the mixture into the baking tray you prepared earlier. Smooth the top with a spatula and tap the tray on the counter to get rid of air bubbles.
  10. Place it on the middle rack of the preheated oven and bake until the top turns golden brown and a toothpick inserted into the center comes out clean. For us this took 45 minutes. But different ovens cook differently, so keep an eye on it.
  11. When the cake is baked, take it out of the oven and let it cool down in the baking tray for around 10 minutes.
  12. Then invert the tray over a plate to remove the cake.
