Masala Baked Beans

 

This is an Indian-style baked beans dish that is usually served at breakfast. It is so comforting and warm to have, and does not take too much time out of your mornings to prepare.

For our recipe we have used Fresh Baked Beans, provided to us by one of our partners, KDM. The Fresh Baked Beans is packed in a rich tomato sauce, making it quick and easy to prepare. The beans are perfectly soft and has a nice creamy flavour. These are perfect for recipes like shakshuka, curries and even just simply on toast.

 

Serving size: 3-4

 

Ingredients:

  • 1 ½ tbsp oil
  • ¼ tsp cumin seeds
  • 1/3 cup finely diced onion
  • 2 minced garlic cloves
  • 1 sliced green chilli
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp salt
  • ½ tsp garam masala
  • 1/3 tsp turmeric powder
  • 2 tsp tomato paste
  • 1 can Fresh Baked Beans
  • 1 tbsp chopped coriander leaves

 

Instructions:

  1. To start off, add 1 ½ tbsp oil and ¼ tsp cumin seeds to a small pot and heat it up for around 1 minute on medium heat, until the cumin is fragrant. Make sure to stir around occasionally using a wooden spatula.
  2. Next, add in 1/3 cup finely diced onion, 2 minced garlic cloves, and 1 sliced green chilli. Sauté on medium-low heat, until the onion is translucent and starting to brown a little, which will take around 4-5 minutes.
  3. Now add ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp salt, ½ tsp garam masala, and 1/3 tsp turmeric powder. Mix the seasoning well with the onions using your spatula.
  4. Then, add in 2 tsp tomato paste. Mix well again and cook the tomato paste for 2 minutes on low heat, while occasionally stirring. This cuts down the tangy flavour of tomato paste.
  5. Finally, add the Fresh Baked Beans can and mix well with everything. Cover the pot and cook the beans on medium heat for 5-6 minutes, while stirring every minute or so.
  6. Once done, remove from heat and top with 1 tbsp chopped coriander leaves. You can serve this dish with some roshi or bread, or any Indian flatbreads.
