Magnum Pudding (with Lactel UHT Whole Milk)

 

Magnum pudding is a vanilla flavoured biscuit pudding with layers of chocolate. Does it taste like the Magnum ice cream? Nope. But it is so delicious!

For our recipe, we have used Lactel UHT Whole Milk provided to us by one of our partners, Standard & Origin (S&O). Lactel UHT Whole Milk is made from 100% cow’s milk and is packed with essential nutrients such as calcium. We found it to be pleasantly buttery and creamy with a slight sweetness to it.

Serving Size: 5-6

 

Ingredients:

  • 2 ½ cups Lactel UHT Whole Milk
  • 2/3 cup sweetened condensed milk
  • 2 tbsp butter (softened)
  • 2 tsp cornflour
  • 1 egg
  • 1 ½ tsp vanilla essence
  • 1 tsp unsalted butter (for greasing the pan)
  • 1 packet Marie biscuits (24 biscuits)
  • 100 g grated dark chocolate

 

Instructions:

  1. Firstly, add 2 ½ cups Lactel UHT Whole Milk, 2/3 cup sweetened condensed milk, 2 tbsp butter (softened), 2 tsp cornflour and 1 egg to your blender and blend on medium speed for about 1 minute until everything is well combined.
  2. Pour the contents of the blender into a pot and then cook the mixture on medium heat until it thickens enough to coat the back of a spoon (this took us around 17-19 minutes). You will have to stir frequently to prevent lumps. Don’t stir continuously, as that would delay thickening. You might need to lower the heat a bit towards the end if the bubbles get rapid. The idea is to get the mixture to thicken gently.
  3. When the mixture thickens, mix in the 1 ½ tsp vanilla essence and then switch off the stove.
  4. Rub a teaspoon of butter on the bottom and sides of the tray you’ll be using for the pudding. We used an 8x5.5-inch tray and our pudding had 3 layers. Yours might be different depending on the size of your tray.
  5. In the tray, arrange Marie biscuits in a single layer. For us it took around 8 biscuits to cover the bottom. You’ll have to break some biscuits to make sure the layer covers the bottom.
  6. Pour 1/3 of the cooked milk and egg mixture over the biscuits. Smooth it into an even layer.
  7. Add 1/3 of the grated dark chocolate over the milk and egg layer.
  8. Once you are done with the chocolate layer, repeat steps 5, 6, and 7 twice if you are using the same size tray as us. If not, repeat until you run out of the milk and egg mixture.
  9. Refrigerate the pudding for at least 2 hours before slicing and serving.
