Loaded Fries

 

Loaded Fries are exactly that. French fries loaded with meat, veggies and cheese. It’s something simple and easy you can prepare for get-togethers like movie nights or even evening tea.

In our recipe we used Mydibel Frozen Belgian Fries which we got from one of our partners Standard & Origin (S&O). These fries come in a variety of cuts such as Crinkle Cut, Classic and Steakhouse. We used the Shoe String cut, which was just slightly thinner than Classic. Mydibel Frozen Belgian Fries are pre-fried and frozen with no artificial colours, flavours and preservatives.

Serves: 4

 

Ingredients:

For the sauce

  • 170g chicken luncheon meat
  • 2 tbsp. oil
  • 1/3 cup diced onion
  • 1 tbsp. minced garlic
  • 1/3 cup chopped bell pepper (1 inch pieces)
  • 2 small cans tomato paste
  • 1 tsp. chilli powder
  • ½ tsp. dried herbs

For the fries

  • 2 cups oil
  • 400g Mydibel Frozen Belgian Fries
  • ¼ tsp. salt
  • ¼ tsp. chilli powder

For topping

  • 1/3 cup shredded cheddar cheese
  • 1/3 cup shredded mozzarella cheese
  • 1 tbsp. sliced green onion
  • 1 tbsp. chilli sauce

 

Instructions:

  1. Mash the luncheon meat with a fork until it comes to a minced consistency.
  2. Heat 2 tbsp oil in a pan and add 1/3 cup diced onion, 1 tbsp minced garlic and 1/3 cup chopped bell pepper. Sauté for about 4 minutes on medium high heat.
  3. Add the luncheon meat and sauté for a minute.
  4. Then add tomato paste, chili powder and herbs and sauté for 2 minutes and remove from heat.
  5. Heat 2 cups oil in a pot and add the Mydibel Frozen Belgian Fries. Fry on high heat for 15 minutes or until golden brown.
  6. Remove to a strainer to drain the oil.
  7. Add the fries to a bowl and add ¼ tsp chili powder and ¼ tsp salt. Shake the bowl to coat the fries evenly.
  8. Add the fries to a baking dish and pour meat sauce on top of the fries. We used a 7.5 by 5.5 inch dish.
  9. Add the cheddar cheese and mozzarella cheese on top.
  10. Preheat the oven at 180 degrees Celsius for 10 minutes. Place the baking dish on the middle rack of the preheated oven and bake for 12 minutes or until the cheese melts.
  11. Remove the baking dish from the oven and drizzle chili sauce on top. Then sprinkle the green onions on top and that's it.
