Kangkung Chicken

 

Whether you spell it kankun chicken, kangkong chicken or kangkun chicken, this dish here is a favourite among Thai style stir fries.

There are a few steps to making sure stir fries turn out well. Prepping ingredients before you start cooking is one of them. Using high heat when cooking is another. Making sure the meat is completely defrosted and the veggies are of good quality are also important steps. And finally, making sure the stir fry sauce, the thing that’s going to bring everything together is tasteful is a crucial step in ensuring everything goes well.

In our stir fry sauce we used Exotic Food Supreme Oyster Sauce which we got from one of our partners Euro Store. The sauce really has some great umami flavour with just a hint of sweetness, making it ideal for not only Asian style dishes like stir fries and fried rices, but also marinades, burgers, wraps and many more.

Serves: 2-3

 

Ingredients:

  • 220g boneless chicken breast (1 cup when chopped into bite sized cubes)
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 tbsp. corn flour
  • ½ cup thinly sliced onion (1 medium onion)
  • 3 garlic cloves
  • 1 inch ginger
  • 3 red chillies
  • 1 cup kangkong stalks
  • 2 cups Kangkong leaves
  • 3 tbsp. oil
  • 1 tbsp. dark soy sauce
  • 3 tbsp. Exotic Food Supreme Oyster Sauce
  • ½ tsp. sugar
  • 1 cup water

 

Instructions:

  1. Cut the chicken into small bite sized cubes. Add the chicken to a bowl along with the salt, ground black pepper and corn flour. Mix to combine and set aside.
  2. Thinly slice the onion, garlic, ginger and Thai red chilli.
  3. Separate kangkong leaves from stalks.
  4. Cut the stalks into 1-inch pieces.
  5. Heat the oil in a large pan and once heated, add the chicken and stir fry on medium high heat for 3 minutes or until cooked.
  6. Then add the garlic and ginger and stir fry for 2 minutes and then add the onion and Thai red chili and fry for another 2 minutes or until the onion looks golden brown.
  7. Add the kangkong stalks and stir fry for 2 minutes.
  8. Add dark soy sauce, Exotic Food Supreme Oyster Sauce, sugar and mix well.
  9. Add 1 cup water and cook for 3 minutes on medium low heat.
  10. Mix in the kangkong leaves, and stir fry for another minute and that's it.
