Horlicks Banana Bread

 

Looking for a way to use up those ripe bananas? Then, this banana bread recipe is perfect for that, and it is super simple and easy to make!

For our recipe, we have used Horlicks Original Malted Drink, provided to us by one of our partners, ADK General Trading. The Horlicks Original Malted Drink is a nourishing, ready-to-drink milk with 7 essential vitamins. Not only did it give our banana bread a richer and fuller flavour, but it also packed it with more nutrients needed for our daily activities.

Ingredients:

  • 350g flour
  • 1 tsp baking soda
  • 1/3 tsp salt
  • 2/3 tsp cinnamon powder
  • 4-5 medium-sized fully ripe bananas (around 1 cup when mashed)
  • 1 egg
  • ¼ cup oil
  • ¾ cup brown sugar (for the batter)
  • ¼ cup melted unsalted butter (at room temperature)
  • 1 packet Horlicks Original Malted Drink (180ml)
  • ½ tsp vanilla essence
  • ½ cup chopped cooking chocolate
  • 1 tsp brown sugar (for the topping)

 

Instructions:

  1. Sift 350g flour to a large bowl. Add in 1 tsp baking soda, 1/3 tsp salt, and 2/3 tsp cinnamon powder. Using a spatula, combine everything together and set aside.
  2. Next, add 4-5 medium-sized fully ripe bananas to a bowl and mash well using a fork. It is important to note that sizes of bananas widely differ from country to country. We have used Maldivian bananas which was around 1 full cup when mashed.
  3. Then, to a new bowl, add 1 egg, ¼ cup oil, ¾ cup brown sugar and ¼ cup melted unsalted butter. Whisk them together for around 45 seconds or until it looks creamy and smooth.
  4. Once mixed, add in 1 packet Horlicks Original Malted Drink, the mashed bananas and ½ tsp vanilla essence. Continue whisking until everything is fully combined.
  5. Then, add the dry flour mixture you prepared earlier to the bowl. Using a spatula, fold and mix the flour with the wet ingredients, just until well combined. Make sure not to over-mix the batter as this can cause the banana bread to be dense when baked.
  6. Lastly, mix in ½ cup chopped cooking chocolate into the batter (you can use chocolate chips as a substitute too).
  7. Preheat the oven to 185 degrees Celsius for around 10 minutes.
  8. Prepare a loaf pan by greasing it lightly with some oil.
  9. Add the batter to the loaf pan and smooth out the top with the spatula. Then, sprinkle 1 tsp brown sugar on top. This will give the banana bread a nice, crunchy, golden-brown crust on top.
  10. Place the loaf pan on the middle rack of the preheated oven and bake until a toothpick inserted into the centre comes out clean. For us, this took 1 hour of baking, but different ovens may vary, so keep an eye on your banana bread while baking.
  11. When fully baked, remove the bread from the loaf pan and let it cool for at least 10 minutes before slicing. Otherwise, it could crumble when you slice.
