Honey Biscuit Pudding

 

This is a surprisingly delicious biscuit pudding with alternating layers of creamy custardy pudding mix and some delicious honey flavoured biscuits. Serve it for your next get together if you want a guaranteed hit. It seriously ticks all the boxes for a great dessert!

For the biscuit layer in our pudding, we’ve used Hup Seng Honey & Milk Cookies provided to us by one of our partners Silver Quest. These are buttery and chock-full of honey flavour; perfect for tea time with a cup of black tea.

 

Serves: 9

Ingredients:

For the corn flour mixture

2 egg yolks

½ cup condensed milk

½ cup full cream milk

3 tbsp corn flour

For the pudding mixture

1 ½ cup full cream milk

1 ¼ cup corn flour mixture

2 tsp vanilla essence

3 tsp honey

For the biscuit layers

18 Hup Seng Honey & Milk Cookies

¼ cup milk

4 tsp honey

For the topping

1/3 cup Crushed Hup Seng Honey & Milk Cookies (6 cookies)

2 tsp honey

 

Instructions:

  1. First, make the corn flour mixture. Add 2 egg yolks, ½ cup condensed milk, ½ cup full cream milk and 3 tbsp corn flour to a blender and blend for 15 seconds on low speed. Set it aside.
  2. To a pot, add 1 ½ cup full cream milk and cook while stirring on low heat for 3 minutes or until the milk is hot (but not boiling).
  3. Change the heat to medium. Then, add the corn flour mixture from step 1 (this will be 1 ¼ cup) to the pot. Continue cooking for 4 more minutes while continuously stirring.
  4. Add in 2 tsp vanilla essence and 3 tsp honey, mix and cook while stirring for 2 more minutes or until the mixture thickens. The mixture is thick enough when you can glimpse the bottom of the pot when you stir. Turn off the heat, give it one final good stir. The pudding mixture is now ready.
  5. Divide the pudding mixture in to three equal parts.
  6. Pour one part of the pudding mixture into a tray (width 7inch, depth 2inch), and spread to cover the entire bottom.
  7. Take one biscuit, dip it into ¼ cup milk, then place it on top of the pudding mixture in the tray. Repeat this process until you have a neatly arranged layer of biscuits on top of the pudding layer.
  8. Drizzle 2 tsp honey on top of the biscuit layer.
  9. Then, repeat steps 6, 7 & 8 to make one more pudding layer, biscuit layer, and honey drizzle layer.
  10. Add the remaining pudding mixture on top and spread it evenly. When you’re done, you should have three pudding mix layers with two biscuit and honey layers in between them. 
  11. Refrigerate the pudding for 2 hours.
  12. When ready to serve, sprinkle 1/3 cup crushed Hup Seng Honey & Milk Cookies on top of the pudding and finish off by drizzling 2 tsp of honey on top.
