Hikimas Noodles


Here’s a really simple noodles recipe for busy days. This one works best when you make it spicy.

Serves: 2


  • 1 onion
  • ½ scotch bonnet pepper
  • 4 garlic cloves
  • 1 tbsp. oil
  • 5 curry leaves
  • 3 inches pandan
  • 2 instant noodles packets (we used Mamee curry flavor)
  • 1 ½ cups water
  • 25 grams dried tuna chips
  • 1 tsp. oyster sauce



  1. Slice the onion, scotch bonnet pepper and garlic thinly.
  2. Heat oil in a large pot and add the onion, scotch bonnet pepper, curry leaves and pandan leaf. Cook until onions soften and starts looking golden. Add the garlic and stir fry for around half a minute.
  3. Take out the noodles from the packets. Break the noodle chunks if you’d like shorter noodles. Add the noodles to the pot along with one of the flavor sachets you get with the noodles.
  4. Add water and dried tuna chips. Give it a good mix. Bring the mixture to a boil and cook until the noodles is done. Ours took around 3 minutes.
  5. Mix in the oyster sauce and that’s it.
