Ghee Rice | Lonumedhu

Ghee Rice

 

Ghee Rice is a flavourful rice dish that features ghee (clarified butter), fried onions, cashews and raisins. It’s superb when paired with a spicy meat curries.  

Serves: 2-3

Ingredients:

  • 1 large onion
  • 10 cashew nuts
  • 2 ½ tbsp. ghee (for frying onions, cashews and raisins)
  • 20 raisins
  • 1 cup rice
  • 1 green chilli
  • 2 cloves
  • 2 inches cinnamon
  • 2 cardamom pods
  • 2 cups water
  • 1/3 tsp. salt (or to taste)

 

Instructions:

  1. Slice the onion thinly. Halve the cashews.
  2. Heat 1 ½ tbsp. of ghee in a large pot. When it melts, add the sliced onion. Fry the onions over medium heat until golden brown and remove to a plate.
  3. Add ½ tbsp. ghee to the same pot and heat it up. When the ghee melts add the cashews to the pot and fry over medium heat until golden. Remove to a plate.
  4. Add the raisins and fry over medium heat until they puff up. Remove to a plate.
  5. Wash and drain the rice. Set it aside.
  6. Add ½ tbsp. more ghee to the same pot you used for frying the onions. When the ghee melts add the green chili, cloves, cinnamon and cardamom. Fry over medium heat until they sizzle.
  7. Add the washed rice and stir fry for over medium heat for around a minute.
  8. Add the water and salt, stir to combine. Put the lid on and bring the mixture to a boil.
  9. Lower the heat and cook until all water evaporates.
  10. Fluff the rice with a fork and then add in the fried onions, raisins and cashews. Gently combine.
