Garlic Chicken Rice

 

This garlic chicken rice recipe is a quick and convenient one for those times you need to put dinner on the table.

In our recipe we’ve used Choice Aromatic Basmati Rice Gold, which we got from one of our partners STO (State Trading Organization). The grains are medium length and when cooked they are fluffy, absorbing all the flavours of the sauces and spices.

As for the cooking, we prepared the whole dish by using a Hitachi Rice Cooker, which was also provided to us by STO. The rice cooker is capable of cooking a variety of rices in addition to white including jasmine, mixed grain, brown, sticky and porridge.

 

Serves: 3-4

Ingredients:

  • 230g skinless boneless chicken
  • 8 cloves garlic
  • 1 tbsp olive oil
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp honey
  • ½ tsp black pepper powder
  • 1 tsp chilli powder
  • 1 cup uncooked Choice Aromatic Basmati Rice Gold (rinsed and drained)
  • 2 cups water
  • 1/3 cup sweet corn
  • ½ tsp chicken stock cube
  • 1/3 cup chopped spring onion

 

 

Instructions:

  1. Cut the chicken into small cubes and finely chop the garlic.
  2. To a bowl add chicken, olive oil, dark soy sauce, oyster sauce, honey, chili powder, black pepper powder and chopped garlic. Mix well to combine.
  3. To the Hitachi Rice Cooker, add the Choice Aromatic Basmati Rice Gold and water.
  4. Then add the corn, marinated chicken along with chicken cube and half of the spring onions.
  5. Cook for 40 minutes and turn the rice cooker off.
  6. Open the lid of the cooker and add the rest of the spring onions on top
