Egg Sandwich

 

Egg sandwiches are easy bites you can prepare for get-togethers and parties.

They key to a good egg sandwich is the filling; it has to be creamy and flavourful. Making ours really delicious is the Heinz Yellow Mustard which we got from one of our partners Standard & Origin (S&O). The mustard is thick and smooth with a lovely tartness and we think it’ll be great in all sorts of sandwiches, burgers, salads and even marinades.

 

Makes: 6 sandwiches

 

Ingredients:

  • 2 ½ cups water
  • 1 ¼ tsp. salt (divided)
  • 4 eggs
  • 12 slices cucumber
  • 3 green chillies
  • 3 tbsp. mayonnaise
  • 1 tbsp. Heinz Yellow Mustard
  • ¼ tsp. ground black pepper
  • 6 slices white bread (large)
  • 6 tsp. butter

 

Instructions:

  1. Add water, 1 tsp. salt and eggs to a pot and boil the eggs for 15 minutes on high heat.
  2. Thinly slice the cucumber and green chillies.
  3. Peel the boiled eggs and add them to a bowl. Then mash the eggs using a fork.
  4. To the same bowl, add mayonnaise, Heinz Yellow Mustard, pepper, ¼ tsp. salt, green chili and mix well
  5. Take two slices of bread and spread butter on one side of each slice; 1 tsp. per slice.
  6. Divide the egg mixture into three portions and then spread a portion on one of the buttered bread slices. Arrange 4 cucumber slices on top. Then place the other butter bread slice on top.
  7. Cut off the crust of the sandwich and then slice the sandwich diagonally.
  8. Repeat steps 5,6,7 until you run out of bread and filling.
