Egg Fried Rice

 

Egg fried rice has to be the easiest among all types of fried rices out there. You can make it as plain as you want or you can liven it up with some meat and vegetables, as we have done here.

For every good rice dish, you need a rice that’s both tasty and of good quality. For our recipe we have used the Masterchef Pakistan Premium Rice, provided to us by one of our partners, ADK General Trading. The longer, fine white grains have a distinct aroma, and remain fluffy and light when cooked. It can be used for a variety of rice recipes such as this.

Ingredients:

For the rice

  • 1 cup Masterchef Pakistan Premium Rice
  • 2 cups water
  • 1 tsp salt

For the stir fry

  • 2 diced sausages
  • 1/3 cup diced carrots
  • 1 small onion
  • 1/3 cup chopped green beans
  • 3 cloves garlic
  • 2 tbsp oil
  • ¼ tsp salt
  • ½ tsp ground black pepper
  • 1 tsp chili flakes
  • 1 tsp sugar
  • 3 eggs
  • 2 tbsp light soy sauce
  • 1 ½ tbsp oyster sauce

 

Instructions:

  1. First, wash the Masterchef Pakistan Premium Rice thoroughly and then drain.
  2. Into a pot, add in the Masterchef Pakistan Premium Rice along with 2 cups water and 1 tsp salt. On medium high heat, cook the rice for 8 minutes. Then place the lid on and cook for another 4 minutes on medium low heat, or until fluffy and soft.
  3. Once cooked, add the rice to a plate and keep it in the refrigerator to cool down for around 15- 20 minutes.
  4. Next, dice the sausages, carrot, and onion. Then chop the green beans and finely chop the garlic as well.
  5. To a pan, add in 2 tbsp oil and heat it up. Then add in the diced sausages and sauté them for 2 minutes on medium high heat or until they are lightly browned.
  6. After that, add in the onion and garlic and continue sautéing for another 2 minutes.
  7. Lower the heat to medium and then add in the carrots and green beans. Stir fry them for 8-10 minutes or until the vegetables become soft.
  8. Now season the vegetable mix by adding in salt, black pepper, chili flakes and sugar. Mix it well.
  9. Using your spatula, push the vegetables to one side of the pan. Then add 3 eggs to the empty side.
  10. Scramble the eggs till they are fluffy and cooked, then mix them with the vegetables.
  11. Remove the rice plate from the refrigerator, and add it to the vegetables and eggs. Then add in light soy sauce and oyster sauce.
  12. Mix the rice, sauces, eggs, and the vegetables really well together, until they are evenly mixed in. Cook for 2-3 more minutes and then remove from heat.
