Custard Biscuit Pudding

 

This custard biscuit pudding is a simple, no-fuss dessert that is creamy and sweet. It starts with a biscuit base made from custard biscuits, followed by a smooth custard filling and is finished with a light whipped topping.

For our recipe, we have used the Maliban Custard Cream Sandwich Biscuits provided to us by one of our partners, ADK General Trading. This custard cream biscuit is a classic treat, with crisp biscuits and a sweet creamy custard filling that can be enjoyed by itself accompanied with a cup of tea.

Ingredients:

For the base

  • 14 Maliban Custard Cream Sandwich Biscuits (biscuit part)
  • 3 tbsp melted unsalted butter

 

For the custard

  • 2 tbsp custard powder
  • 1 ½ cup full cream milk
  • 3 tbsp sugar
  • ½ tsp vanilla essence

 

For the whipped cream

  • 1/3 cup whipping cream
  • 14 cream part of the Maliban Custard Cream Sandwich Biscuits 

 

For the topping

  • 3 Maliban Custard Cream Sandwich Biscuits

 

Instructions:

  1. First take the 14 Maliban Custard Cream Sandwich Biscuits and separate the biscuit and cream part. Keep the cream part aside for later.
  2. Add the biscuit part into a blender and blend on high power for 10 seconds or until it becomes a fine powder like texture. Scrape the sides and then add 3 tbsp melted butter and blend again for 10 seconds on high power. Scrape the sides again and blend for another 10 seconds.
  3. Add the mixture equally into 2 glasses (we used 3 ½ inch long, 3inch wide glasses). Press the mixture inside using a spoon. Refrigerate for 15 minutes.
  4. Into a small bowl, add 2 tbsp custard powder and 2 tbsp full cream milk from the 1 ½ cup milk. Mix until the powder is dissolved. Set this aside.
  5. Add the rest of the milk to a pot and heat on medium and mix using a whisk for 3 minutes. When the milk is hot, add the custard mixture, 3 tbsp sugar and ½ tsp vanilla essence and stir to combine.
  6. Using a whisk, keep stirring on high speed continuously for about 4 minutes on medium high heat until it reaches a medium thick consistency (rapid bubbles will appear when it’s about to be done). Once it is done, and thick enough to coat the back of a spoon, switch off the stove. The custard will continue to thicken with the residual heat even after it is turned off. Pour into the glasses equally. Let them rest in the fridge for 1 hour.
  7. To prepare the whipped cream, add 1/3 cup whipping cream into a mixing bowl using a hand-held mixer, whip the cream on medium speed for 5 minutes or until you get soft peaks (Soft peaks mean when you take the beater out of the whipping cream, the beater would have peaks that barely hold their shape and flop easily).
  8. Then add the cream part of the 14 cream part of the Maliban Custard Cream Sandwich Biscuits to the whipped cream and whip again for a minute or until well combined (the whipped cream will have stiff peaks at this point, which means when you take the beater out of the whipping cream, the beater would have peaks that hold their shape).
  9. Take the refrigerated glasses out and add the whipped cream equally on top of each glass.
  10. Crush and sprinkle 1 Maliban Custard Cream Sandwich Biscuits on top of both, place 1 biscuit of on top of each glass before serving and enjoy!
