Cola Cake

 

This cola cake is soft, rich and full of flavour with a hint of fizz from cola.

For this recipe, we have used Milaf Cola, provided to us by one of our partners, Standard & Origin (S&O). Milaf Cola is a new soft drink from Saudi Arabia, known as the world’s first cola made with date extract. Instead of using added sugar, it gets its natural sweetness and nutrients from dates, making it a healthier choice compared to regular sodas.

Ingredients:

For the cake batter

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1/3 cup sugar
  • ¼ tsp cinnamon powder
  • 1 can Milaf Cola
  • ½ cup unsalted butter (cubed to make it easier to melt)
  • 2 tbsp cocoa powder
  • 3 eggs at room temperature
  • ¼ cup chilled milk
  • ½ tsp vanilla essence
  • 1 tbsp lemon juice
  • ¼ tsp lemon zest

 

For the chocolate cola glaze

  • 100 g chopped dark chocolate
  • ¼ cup whipping cream
  • 2 tbsp Milaf Cola

 

 

Instructions:

  1. Sift 1 cup all-purpose flour into a bowl. Then add ½ tsp baking soda, 2 tsp baking powder, ¼ tsp salt, 1/3 cup sugar, ¼ tsp cinnamon powder.  Whisk all of it together until fully combined. Set it aside.
  2. To a small saucepan, add 1 can Milaf Cola, ½ cup unsalted butter (cubed to make it easier to melt), 2 tbsp cocoa powder. On medium low heat, bring the mixture into a boil. Stir occasionally using a spatula every 3 to 4 minutes until the butter fully melts.
  3. Add the cola mixture into a big bowl and let it cool for about 5 minutes. Then gradually add the flour mixture into the cola mixture, stirring well using a whisk or spatula, making sure there are no lumps. Batter should look a bit thick. Set aside.
  4. Preheat the oven for 10 minutes at 180 Degree Celsius. Add ½ tsp butter into a 7.5-inch round tray and brush the inside well. Line the tray with a baking paper for easy removal once the cake is done.
  5. In a small bowl, mix 3 eggs at room temperature, ¼ cup chilled milk, ½ tsp vanilla essence using a whisk or a fork. Whisk until it is fully blended.
  6. Add it into the cola mixture and gently mix until well combined. The mixture should look runny. Finally add 1 tsp lemon juice and ¼ tsp lemon zest. Give it a final good mix.
  7. Transfer the batter into the prepared tray. Bake for 30 minutes or until a toothpick inserted in the centre comes out clean.
  8. Once the cake is baked and out of the oven, trim around the edges and the sides of the cake. Let the cake rest for 30 minutes.
  9. To prepare the chocolate cola glaze, add 100 g of chopped dark chocolate into a small bowl. Set it aside.
  10. Heat ¼ cup whipping cream in a small pot for 1 to 2 minutes on medium low heat. Then add 2 tbsp Milaf Cola and stir for 1 more minute.
  11. Take it off the heat and immediately pour it over the chopped dark chocolate. Cover it using food wrap and let it sit for 5 minutes.
  12. Remove the cake from the tray.
  13. Mix the chocolate into a glaze and let is sit for 5 more minutes to fully cool down. Once cooled, pour the mixture over the cake. Chill in the fridge for 1 hour before serving.
