Chocolate Wafer Truffles

 

These soft and crunchy chocolate truffles are easy to make, a great option for a quick dessert or snack.

For our recipe, we have used the T-Time Wafer Chocolate, provided to us by one of our partners, Sunny Enterprises. These flavoured cream wafers are super crunchy with a sweet chocolate flavour, which works really well in this recipe.

Serving size: 6

 

Ingredients:

  • 2 packets T-Time Wafer Chocolate (90g)
  • 2 ½ tbsp dark chocolate spread
  • 6 cashew nuts
  • 2 tbsp unsalted butter
  • 50g finely chopped cooking chocolate
  • 1/8 tsp salt
  • 2 tbsp finely chopped cashew nuts

 

Instructions:

  1. Crush the 2 packets T-Time Wafer Chocolates (90g) using a fork until it becomes fine, coarse crumbs. This will take around 3 to 4 minutes. Then add 2 ½ tbsp dark chocolate spread to the mixture and combine well with the fork until evenly mixed.
  2. Divide the mixture equally to 6 parts. Take one part, place it in your palms and flatten with your fingers. You can wear gloves to shape the balls easily.
  3. Place a cashew nut in the middle and roll it as a ball, making sure to cover the cashew nut fully. While shaping, press the wafer together to make it firm and smooth. Place it on a plate lined with baking paper.
  4. Repeat this process until you have 6 truffles. Keep the truffles in the refrigerator while you continue the next steps.
  5. Next, in a small pan, heat up 2 tbsp unsalted butter on low heat for 2 minutes or until it is fully melted. Then add in 50g finely chopped cooking chocolate along with 1/8 tsp salt and mix with a spatula for 1-2 minutes, until the chocolate is fully melted and incorporated with the butter.
  6. Pour the melted chocolate to a small bowl and add in 2tbsp finely chopped cashew nuts. Mix well with a spoon.
  7. Take out the truffles from the refrigerator and dip each one in the melted chocolate mixture, until fully coated with chocolate.
  8. Arrange the truffles back in the lined plate and place in the refrigerator for 20-30 minutes, until the chocolate hardens.
