Chocolate Paan Boakibaa

 

This is almost like a combination of a fudgy brownie and sticky paan boakibaa, making it the ultimate fudgy and moist chocolate paan boakibaa. We have also added chocolate chunks, raisins, and almonds to this boakibaa, bringing in different textures in addition to the soft and chewy base.

For our recipe, we have used the Fresh Sweetened Condensed Creamer, provided to us by one of our partners, KDM. This a very creamy and smooth condensed milk that you can use to make desserts, chai, and several other drinks. It is also not overly sweet, with a nice, thick texture.

Makes: 8-inch square tray

 

Ingredients:

  • 5 cups shredded white bread
  • 2 cups water
  • 2 eggs
  • 1 tsp softened unsalted butter
  • 1 can Fresh Sweetened Condensed Creamer (380g)
  • 1/3 cup cocoa powder
  • 40g raisins
  • 1 tsp vanilla essence
  • 70g largely chopped dark cooking chocolate
  • 30g chopped almonds
  • ¼ tsp salt

 

Instructions:

  1. Add 5 cups shredded bread into a large bowl. You can shred the bread using your fingers, as it does not have to be too fine. Also, you don’t have to remove the crust of the bread.
  2. Then, gradually sprinkle 2 cups water to the shredded bread, so that they get soaked evenly. Using your fingers, mix the bread with the water and set aside to soak for around 20 minutes.
  3. Set your oven to preheat at 175 degrees Celsius for 10 minutes.
  4. Grease an 8-inch square tray using a small amount of oil or butter. Make sure the inside of the tray is fully coated. Set aside.
  5. Next, beat 2 eggs using a whisk in a large bowl. Then, add in 1 tsp softened unsalted butter and 1 can (380g) Fresh Sweetened Condensed Creamer. Beat everything together again until fully combined and smooth.
  6. After that, add 1/3 cup cocoa powder, 40g raisins, 30g chopped almonds, 1 tsp vanilla essence, and ¼ tsp salt. Use a spatula to combine everything well together. It will look like a wet chocolate cake batter at this point.
  7. Next, add the shredded bread we left to soak earlier. Use your fingers to lightly squeeze the bread to get rid of excess water before adding it in.
  8. Then, add 70g largely chopped dark cooking chocolate to the batter. Mix everything together until fully combined. Pour the batter into the greased tray. You can use the spatula to smooth out the top of the boakibaa.
  9. Place the boakibaa on the middle rack of the preheated oven and bake at 175 degrees Celsius for 50 minutes (you might have to bake for a longer/shorter amount of time depending on the oven). When the boakibaa is baked, the top will be a dark brown colour and a toothpick inserted into the centre, should come off clean.
