Chocolate Cookies

 

These cookies are soft and moist and when you bite into them, they crumble in your mouth in the most satisfying of ways.

To get these cookies to taste they best kind of chocolaty as possible, you need to use the best possible cocoa powder you can get your hands on. We used Domo Cocoa Powder which we got from one of our partners ADK General Trading, and we were very satisfied with its deep chocolaty taste. Usually when we do things with chocolate, we add a bit of coffee to intensify the chocolate flavour. However, with Domo Cocoa Powder we didn’t have to do that. We also loved that it was unsweetened, allowing us to control the sweetness of the cookies.

On the topic of sweetness, the dark chocolate chunks we add to the batter and on top of the cookies could make the cookies too sweet for some. So be mindful of that and make adjustments to your liking.

Makes: 11

Ingredients:

  • 2/3 cup flour
  • 1/3 cup Domo Cocoa Powder
  • ¼ tsp. salt
  • ½ tsp. baking powder
  • 1 egg
  • 2/3 cup brown sugar
  • ¼ tsp. vanilla essence
  • ½ cup melted butter (at room temperature)
  • 1/3 cup dark cooking chocolate (for dough)
  • ¼ cup dark cooking chocolate (to put on top)

 

Instructions:

  1. Sift the flour, cocoa powder, salt and baking powder together into a bowl and mix to combine.
  2. Add the egg, brown sugar, vanilla essence, and melted butter to a large bowl and mix with a whisk for about two minutes or until everything is well combined.
  3. Then add the flour and cocoa powder mix from step 1 into the egg mixture. Mix with a spoon until combined.
  4. Chop the dark cooking chocolate into small chunks.
  5. Add 1/3 cup chocolate chunks into the batter and mix to spread them out evenly.
  6. Cover the bowl with cling film and keep it in fridge for 20 minutes.
  7. Line a tray with baking paper.
  8. Scoop 2 tbsp. of cookie batter and shape it into a ball and place on the baking paper lined tray. Then press down a bit to flatten it a little to get the cookie shape.
  9. Repeat step 8 until you run out of batter. Leave a gap of around an inch in between the cookies as they are going to spread a little as they bake.
  10. Pre-heat the oven for 10 minutes at 170 degrees.
  11. While your oven is preheating, place the tray with the cookies in your freezer and leave it in there for the entire 10 minutes.
  12. When the 10 minutes is up, remove the tray from the freezer and put ¼ cup dark chocolate pieces on top of the cookies. Gently press the pieces in.
  13. Place the tray on the middle rack of the preheated oven. Bake at 170 degrees Celsius for 17 minutes or until the edges are slightly crispy and the top is slightly cracked.
  14. Remove the tray from the oven and let the cookies cool down in the tray. The cookies are going to be very soft when you remove them from the oven. They'll firm up as they cool.
