Chocolate Baked Oats

 

Chocolate baked oats are quick and easy to make and will have you fuelled and ready for the day. You can have this healthy and nutritious dish for breakfast or as a snack during the day.

For the chocolate baked oats, in our recipe we have used Emco Oat Flakes – Big Leaves provided to us by one of our partners, Araaby. These oat flakes are great for baking as they are chewier than other flakes and can be used in granola bars, cookies and muffins. They are a 100% whole grain and naturally high in fibre.

Serving size: 5-6

 

Ingredients:

  • 1 ½ cup Emco Oat Flakes – Big Leaves
  • 3 big ripe bananas or 6 small bananas
  • 4 eggs
  • ½ tsp cinnamon powder
  • ¼ cup honey
  • 1/3 cup milk
  • 1 tsp vanilla essence
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ cup finely chopped dark chocolate
  • 1/3 cup cocoa powder
  • ½ cup dark chocolate chunks
  • 3 tbsp finely chopped almonds
  • 2 tbsp raisins

 

Instructions:

  1. Preheat the oven at 180°C for 10 minutes.
  2. Add the oats to a grinder and grind until it becomes a powder. For us this took 30 seconds on high power.
  3. Cut 3 big ripe bananas or 6 small bananas into small pieces and then use a fork to mash them in a large bowl.
  4. Add the mashed bananas into the blender along with 4 eggs, ½ tsp cinnamon powder, ¼ cup honey, 1/3 cup milk, 1 tsp vanilla essence, 2 tsp baking powder, ¼ tsp salt, ¼ cup finely chopped dark chocolate and 1/3 cup cocoa powder. Blend for 1 minute until it becomes smooth. Use a spoon to scrape the sides and give it a good mix to ensure everything is incorporated well.
  5. Prepare a tray by greasing it with 1 tsp unsalted butter. Pour the mixture in and smooth the top with the back of a spoon. Add ½ cup dark chocolate chunks, 3 tbsp almonds and 2 tbsp raisins (you can dunk some of the raisins on top of the batter using the back of a spoon).
  6. Bake for 30 minutes at 180°C. Let it cool for at least 30 minutes. Once cooled, scoop using a spoon and devour.
