Choco Chip Cookie Delight


This is a layered dessert in which vanilla and chocolate play against each other amidst a backdrop of yummy chocolate chip cookies.

In this recipe, we’ve used Quickbury Choco Chip Cookies, which we got from one of our partners STO (State Trading Organisation). These cookies look nice and golden, and when you bite into them, they crumble pleasantly in your mouth. For us though, the best thing about them is that they are 40 % chocolate, meaning there’s a lot of chocolate in every single bite.

  • 12 Quickbury Choco Chip Cookies (2 packets)
  • 2 tbsp. melted butter
  • 1 cup whipping cream (250ml)
  • 1/3 cup condensed milk (85ml)
  • 2 tbsp. cocoa powder
  • ¼ tsp. vanilla essence



  1. Add 8 Quickbury Choco Chip Cookies to a bowl and crush them using your fingers until they look like crumbs. Set aside the remaining 4 cookies; you’ll be using them for the topping.
  2. Add melted butter to the bowl and mix it well with the cookie crumbs. Set it aside.
  3. Add the whipping cream to another bowl. Beat with an electric hand mixer on medium speed until you get soft peaks (soft peaks mean when you take the beater out of the whipping cream, the beater would have peaks that barely hold their shape and flop easily). For us this took 6 minutes.  
  4. Then add condensed milk and vanilla and beat for 2 more minutes or until you get stiff peaks (stiff peaks mean when you lift the beaters from the mixture, the peaks hold their shape and if you hold the bowl upside down over your head, the mixture would not fall on to your head). We’ll call this vanilla cream.
  5. Transfer half of the vanilla cream into another bowl. Sift cocoa powder into the bowl. Then using a whisk, gently mix until fully combined. We’ll call this the chocolate cream.
  6. Take 4 small glasses (we used 2.5 inch dessert glasses), and add 2 tbsp. of the cookie crumbs mixture into each glass. Gently press down to make an even layer.
  7. Add 2 tbsp. of the chocolate cream on top of the cookie crumb layer (you can also pipe an equivalent amount if you want it to look very neat and pretty).
  8. Make another cookie crumb layer by adding 2 tbsp. of the cookie crumb mixture and pressing down gently.
  9. Add 2 tbsp. of vanilla cream on top of the second cookie crumb layer.
  10. Sprinkle some cookie crumbs on top (you’ll have a little bit of the cookie crumb mixture left after making the layers).
  11. Gently place a Quickbury Choco Chip Cookie on top of every glass and that’s it.
