Chilli Cheese Paratha

 

If you are looking for ways to spice up your regular parathas, then this is a good recipe to try. These chilli cheese parathas are not only great to have with side dishes and curries, but it also tastes really good by itself.

For our parathas, we have used Aashirvaad Whole Wheat Flour, provided to us by one of our partners, Standard & Origin (S&O). Aashirvaad Whole Wheat Flour is a 100% pure stoned milled flour that is tasty and nutritious. It retains the right amount of moisture while kneading the dough, yielding soft and fluffy paratha and roti.

 

Makes: 5 parathas

 

Ingredients:

For the dough

  • 1 cup Aashirvaad Whole Wheat Flour
  • ¼ tsp salt
  • 1 tbsp oil
  • 1/3 cup water (at room temperature)
  • 5 tsp Aashirvaad Whole Wheat Flour (to roll out the parathas)
  • 3 tbsp + 1 tsp ghee (to cook the parathas)

 

For the chilli cheese filling

  • 1 tbsp finely chopped green chillies
  • ¼ cup finely chopped capsicum
  • ¼ cup finely chopped onion
  • 2 tbsp finely chopped coriander leaves
  • ½ cup shredded mozzarella cheese
  • ¼ tsp garam masala
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 2 tbsp mayonnaise
  • 2 tbsp cheddar cheese spread

 

Instructions:

  1. To a large bowl, sift together 1 cup Aashirvaad Whole Wheat Flour and ¼ tsp salt. After that, add 1 tbsp oil to the flour and mix well using your fingers, until it becomes a dry, coarse flour mixture.
  2. Then, gradually add 1/3 cup room temperature water, while kneading the dough. When all the water has been added and mixed in, it should be a smooth, soft dough (but not wet enough to stick to your fingers). Cover the dough using food wrap or a clean kitchen towel and set aside to rest for 30 minutes.
  3. In the meantime, make the chilli cheese filling. Take a new bowl and add in 1 tbsp finely chopped green chillies, ¼ cup finely chopped capsicum, ¼ cup finely chopped onion, 2 tbsp finely chopped coriander leaves, ½ cup shredded mozzarella cheese, ¼ tsp garam masala, ¼ tsp ground black pepper, ¼ tsp salt, 2 tbsp mayonnaise, and 2 tbsp cheddar cheese spread.
  4. Using a spoon, mix everything together until the spices are well combined into all the ingredients. It will be a thick and creamy mixture.
  5. After resting the dough, divide it into 10 equal portions. Add ½ tsp Aashirvaad Whole Wheat Flour onto the surface and roll out each portion into a round circle with 6-inches in diameter. Continue rolling like this until all the dough portions are rolled out.
  6. Place 1 rolled-out paratha on a clean, dry surface or plate. Then, place 2 tbsp of the chilli cheese filling on top of the dough and spread it evenly, leaving around 1 cm from the edges.
  7. Take another rolled-out dough and place it on top of the filling, exactly on top of the dough below. With your fingers, lightly press all around the circle, making sure that both pieces of dough stick together, especially at the edges.
  8. Repeat steps 6 and 7 for the rest of the dough portions.   
  9. Next, heat up a pan for 30 seconds on high heat. Then, reduce the heat to low and place a paratha on the pan. Keep for 30 seconds, then flip (it will be half-cooked on that side at this point).
  10. Spread around ½ tsp of ghee on the top side of the paratha and increase the heat to high again.
  11. After 30 seconds, flip the paratha again and brush ½ tsp ghee on this side. Flip for the last time and let it bake for another 30 seconds, then transfer to a plate. Once fully cooked, the paratha will have dark brown spots on both sides and the cheese filling inside would have melted.
  12. Repeat steps 9, 10 and 11 to bake the rest of the chilli cheese parathas.
