Chicken Salad

 

This is a creamy and crunchy chicken salad, made with stir-fried chicken, fresh vegetables, fruits, and a delicious creamy dressing.

To make our dressing, we have used Young’s Chicken Spread, provided to us by one of our partners, Sosun Fihaara. This is a creamy chicken spread made with cooked chicken, vegetable oil and other quality ingredients. The Young’s Chicken Spread is perfect for making sandwiches, salads, wraps and so much more.

Ingredients:

For the chicken

  • 250g boneless chicken
  • ½ tsp chilli powder
  • ¼ tsp black pepper
  • 1/3 tsp garlic powder
  • 1/3 tsp salt
  • 1 tbsp olive oil

For the salad

  • ½ cup chopped lettuce
  • ¼ cup thinly sliced carrots
  • ¼ cup thinly sliced red cabbage
  • 1/3 cup diced cucumber
  • 6 cherry tomatoes (sliced into halves)
  • ¼ medium-sized green apple (thinly sliced)
  • ¼ medium-sized red onion (thinly sliced)

For the dressing

  • 2 tbsp Young’s Chicken Spread
  • 1 tbsp mayonnaise
  • 1 tsp lime juice

 

Instructions:

  1. Cut 250g boneless chicken into bite-sized cubes (around ½ inch) and add to a bowl. Then, season the chicken with ½ tsp chilli powder, ¼ tsp ground black pepper, 1/3 tsp garlic powder, and 1/3 tsp salt.
  2. To a pan, add 1 tbsp olive oil and heat it up for 30 seconds on medium-low heat. Add in the seasoned chicken and stir-fry for 10 minutes or until the chicken turns golden brown in colour. Remove from heat and set aside.
  3. Next, add ½ cup chopped lettuce, ¼ cup thinly sliced carrots, ¼ cup thinly sliced red cabbage, 1/3 cup diced cucumber, 6 cherry tomatoes (sliced into halves), ¼ medium-sized green apple (thinly sliced), ¼ medium-sized red onion (thinly sliced), and the cooked chicken to a large bowl. Set aside.
  4. Now, make the salad dressing. Add 2 tbsp Young’s Chicken Spread, 1 tbsp mayonnaise, and 1 tsp lime juice to a small bowl. Using a spoon, mix them together until fully combined.
  5. Add the salad dressing to the bowl with the chicken and vegetables. Toss and mix the salad using a large spoon, until all the components are well coated with the dressing. As an optional garnish, top the salad with some toasted sesame seeds before serving.
